We've been making raw vinegar recently and love the process. Just about a month ago, we added some pears to our vinegar that we had left over from some processing. It's a great way to ensure nothing goes to waste. ♥♥♥

I have been making apple scrap vinegar for a few years now. I love using what would otherwise be discarded. I do give our chickens the fruit once I strain it off. Thanks for another great video.

Another question for you. Why use salt for sauerkraut fermentation but sugar for fruit? So is it salt when fermenting veggies and sugar for fruit? The difference im curious with gut issues and watching the prediabetes as well.

They're two different types of fermentation. Vinegar fermentation requires air (aerobic) and uses different yeasts from the air. The sugar is part of the fermentation process and feeds the initial yeast. Then the bacteria take over from there and turn the mixture into vinegar. Lacto-fermentation is completely different and requires an anaerobic (no air) environment that's slightly acidic and salty. This is where you can get some wonderful and delicious fermented pickled dishes, like sauerkraut. Hope this helps!

Is it ever ok to use fruit that has fallen from the plant/tree? I'm thinking about apples or pears that have fallen.

I do, from our trees. I know how they've been grown, and we have a deer fence around them so there's no poop from them...although there may be from the quail and pheasant that love them too!

Nope! If it's fermented properly, it will just continue to become stronger vinegar over time. If you want to slow that process down, refrigeration is a good idea but not necessary.

If the berries have a white yeast coating. I assume you don’t wash the berries first? Before making vinegar

I give them a little rinse to get rid of any dust, but I don't scrub them.

What about prediabetes and the sugar? How can sugar control blood sugar? I believe it works but don't really understand how that's possible using sugar when one is trying to avoid sugar. Thank you Heidi.

Is that the sugar breaks down when turned to vinegar and no longer a high glycemic issue or concern?

Yep! That's how it works. When the vinegar is finished, there is not sugar left in it. It's quite the amazing chemical process!

I haven't tried frozen fruit. The thing I would be concerned with would be extra moisture.... But give it a try and see what happens?
