Mince curry and potato with hot soft roti is definitely a family favourite. And the best way to make any protein go a little bit further is to add some eggs which are both nutritious and delicious!
Ingredients
500g lamb mince
1 extra large potato, cubed
1/4 cup oil
a handful each of curry leaves and thyme sprigs
1 large onion, sliced
2 small cinnamon sticks
1 tsp hurdee (tumeric) powder
1 tsp steak and chops spice
1 heaped tbs mixed masala
1 tsp crushed ginger and garlic
1 tsp rough salt - adjust to taste
1 tomato, grated
Dhania to garnish
6 boiled eggs
