Making Pancake Mix-

Having a few quick bread mixes on the shelf really helps when you are busy. This pancake mix is just wonderful and a great addition to the pantry.
9 Cups Flour
1 Cups Sugar
1 1/2 Cup Dry Milk
4 TBS Baking Powder
2 TBS Baking Soda
1 TBS Salt
To mix add:
1 cup Pancake Mix to ¾ cups water
Cook in a prepared skillet until golden brown.
Be so blessed.

Just a suggestion, using a whisk to mix this will more evenly blend things. I love that this recipe is scaleable since I'm just cooking for 1. Thanks for the video!

Good morning, I may skip the sugar in your recipe and I am surprised that you did not add an egg when you were making it. If I skip the milk powder , would milk work instead of water? Thank you for sharing.

I don't see why not. There are a lot of recipes out there.

Traditional cooks didnt have powdered milk so yes. Milk is fine. Ive no idea why you would need to make this dry mix to store. Unless you are a caterer. It takes longer to get your mixing bowl and whisk than to put the ingredients together. Also sugar wasnt cheap. I notice it is over used in US recipes.

Here is s standard Victoria sponge cake mix. 4 medium eggs ( these normally weigh 2 oz) The weight of the eggs in margarine or butter. White castor sugar Self raising flour. Cream fat and sugar. Beat in eggs and some flour. Fold in rest of flour. Bake in 2 sandwhich tins Moderate oven. For more 'homely' cakes add more flour. We used to make one with chopped apples. Baked in a deeper tin. Or add cinnamon. Ginger Mixed spices and sultanas. Or take 1/3 flour out and replace with cocoa powder. Classic victorian sponges are ususlly put one on the other witj strawberry jam and whipped cream between. Dust icing sugar on top.

I'm from the UK and never put sugar in pancakes. But ours are closer to French crêpes than these. Ive never bought a cake or any other sort of mix. Pancakes are 1 egg. 1/2 pint milk whisked together . Add 4ounces plain flour whisking as you go. I use an old fadhioned hand whisk. No need for anything else. Scotch pancakes are a thicker mix and do have a bit of sugar and sultanas in. Also English pancakes are large and thin. 2 to 3 tbs of mixture in your buttered frying pan and let it spread. Once it moves whe you shake the pan flip it over. Easy peasy. Tip onto plate. Sprinkle with sugar and squeeze of lemon juice. Roll up. You can use honey instead of sugar. Or I suppose stevia would do as well. Scotch ones smaller. Drop one tbs of mix into hot buttered pan. Cook several at once. No idea why you need all the other ingredients.

I am noticing your powdered milk. I can see the brand name is Nido. I would like to purchase powdered milk for my long term pantry. Can you please provide the part number for what you have? Thank you.

Often this mix (made by Nestle) is in the Hispanic section of US markets, at least here in Central Florida and I find it at Publix.
