The Last Samurai visits Izushi town in Hyogo prefecture and took a lesson of Soba noodle making. Izushi is famous for Soba, buckwheat noodle. And it is also known as little Kyoto, a beautiful traditional town. You can learn how to make Soba through this episode and learn about the history and the nutrition of Soba.

Wow!!! That's a lot of steps to make noodles! I didn't think there would be so much work in making them! I can't help but wonder if the other types of noodles like, Ramen and Udon are the same type or what differences in material and making the noodles there are! Cool video Samurai!! Thank you!

I heard they cover udon with plastic sheet and step on it to make it firm and chewy in Kagawa. Thank you for watching.

Mifune style has its name. It is called Tasukigake. You really watch carefully.

Was that 100% soba flour? Pretty good if a beginner can make noodles stay long after cooking . Good job I like it !
