In this video I demonstrate how to make okra pickles using vinegar, water and spices. Okra isn't slimy when cooked correctly with something acidic like vinegar or tomatoes.
Brine- 4 cups water, 2 cups vinegar, 1/2 cup salt plus spices

Nice job! I just made refrigerator bread and butter pickles from my cucumbers, they were so easy and very delicious. When my okra comes in I’m going to try this recipe and pickle them.

Looks good Cheri! I absolutely love okra. I can't wait for mine to come in. I gobble them up fresh so I never have any left to pickle. I've got to pickle some this year though. Okra pickles are the best.

Just starting to harvest mine for this year! Last year, I barely got enough to fry up for dinner a few times, but this year I made sure to plant two, nice long rows and it's finally hot enough here in SE OK for the okra to bloom! Thankfully, the green beans are about done, cause I'm about to be overrun with tomatoes, peppers, and okra. Hopefully, my cuc's catch up soon. I've got a great pickle relish recipe that I want to put up again this year. Thanks for the inspiration! Oh...lol and I've not heard too many people call them "okra pickles". We say pickled okra instead. ;-)

If I slice them I call it pickled okra. If I leave them whole I call them okra pickles.

I put chopped okra in my stew last night. I fried it with my onions, tomatoes, garlic, and peppers, plus fresh chopped herbs. It was so tasty, I never knew it could be cooked and not be slimy.

Did you? Are you growing more this year? Okra's one of those "staple crops" for me and my fam. We love it fried and pickled and it's not okra gumbo without okra! LOL

Just a tip, if you add a cup of vinegar to your sterilizing water, it will prevent the mineral scale on jars.

Yes that works. I noticed it was causing pitting in some of my canning pots so I stopped doing it. I just wipe them off with a cloth with vinegar.

That would be nice. I keep giving away the okra pickles because people keep coming back for more. I can't make them fast enough. lol

Many years ago I had a recipe for pickled okra that did not require a water bath. I made several batches during our garden season and they turned out great. During one of our moves my cookbook that had the hand written recipe in it got lost and I have not been able to find another recipe with no water bath. Everyone tells me, oh no you have to do the water bath. No you do not, I have made them several times over.

I agree. You can open kettle them. I get a lot of flack if I say that. lol

@@TexasHomesteaders not sure what open kettle means. Once I poured the brine in over my okra and wiped down the rim of the jars, I just put the lids on and I was done.

did know if u keep the leaves cut below where u have already picked they will put out alot more

You can get rid of that chalky looking on your jars by just putting a tad bit of vinegar in the water.

I'm personally not concerned about the minerals left on the jars but yes, that works for people who are bothered by that.

With enough vinegar, I'm sure you can get away with open kettle canning these. WB helps them seal though.

Because I like to taste the okra and not just the vinegar. If you want to do equal parts then you can. I have found that people who do that need to cut it with sugar and I try to avoid sugar due to my hypoglycemia so if I can avoid sugar in my recipes then I do.

Yes. The acid neutralizes most of the slime
