My grandma used to make us the best dinners and “Pepper Steak” was one of them - usually thick cuts of steak, peppers and onions served over basmati rice. Who said vegans can't enjoy this? It's UNREAL how much seitan can resemble meat. It tastes delicious when prepared right and has over 23g of protein per 1/4 cup.

For the seitan:
- 2 cups vital wheat gluten
- 1/4 cup nutritional yeast
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika

- 2 tablespoons tomato paste
- 2 tablespoons olive oil
