Describes the initial steps needed to make 1 gallon of Zinfandel wine from a concentrate.
Ingredients:
1 quart Zinfandel Concentrate
3/4 gallon water
1 black teabag
1/4 lemon
1/4 teaspoon bread yeast
1/4 teaspoon Red Star Premiere Classique wine yeast
Note: I am not a professional winemaker. I hold no responsibility if the results of your winemaking causes injury or ill health. This is as natural (where possible) winemaking channel. The wines made on this channel do not use sulfites. You may use them and\or yeast nutrients and or energizers if that is how you prefer to make your wine/mead. This channel uses pasteurization.
During the first 3 days give your musk a good stir, and to break up the fruit cap that will form if you are not using straining bags. Rack into secondary after 5 - 7 days, and continue to rack every 6-8 weeks until clear. Degas, back sweeten, and let bottle let age for at least 12 months to 5 years.

Zinfandel?! Fancy schmancy! :)) Can't wait to see how this turns out. Literally. Can't wait, given how long it is going to take, lol! Btw...you did this yesterday!! Hah, I was brewing on Friday the 13th too! :) Made banana, cherry and strawberry wine and it's already going wild! Might end up as some sort of rose wine actually

Good evening Im really enjoying your channel so far. Love the fact that youbare doing this in the most natural way possible with no additives and what not. I am curious though, when racking, are you topping off with a similar wine to keep the maximum possible end product? Thank you in advance.

I know your recipe is not terribly hard to understand, as usual :) But this does fall into my category of fancy/special since I've never seen grape concentrate in a store. This goes for Denmark and Hong Kong, so this is not as common an item in general as you might have assumed

Sometimes I will make things just because I want to make them. Not having a vineyard, not living near one, sometimes you do what you got to to to get ingredients.

Can confirm. No grape concentrates in stores here in Denmark, but you might want to visit a vineyard, although don't expect to find something like Zinfandel in this climate. :)

Hi Charles, Because your starting O.G was 1.084 you did not need to add any additional sugar I am guessing, since there must have been enough sugar in the concentrate.

@Chip Geil That is correct. Wine grapes usually have enough sweetness so that added sugar is usually not required.

Hi I want to add potassium metabisulfites to my white wine. 4 gallons how much should I add. And I want to treat it with bentonite as well. Should I add sulfites before or after bentonite treatment.

Sorry, aside from not using either sulfites or bentonite, this channel does not offer individual winemaking advice.

I believe 1 campden tablet per gal or if you're using potasium metasulphibite powder it's 1/16 tsp per gal. I would do your bentonite treatment 1st (if you're sure it won't clear on its own over time).

So i started my first mango wine mash the other day. I added alittle bit of star san solution to the air lock. Today when i was gonna give it a stir, i accidently tilted the lid, so alittle of the solution dripped in to the mash. Will this be a problem?

. That yeast is dead since your pot temperature is 172 degrees and yeast preferred number as a maximum to stay alive is from 104 to 110 degrees fatenheit.

The yeast in the pot is acting as a homemade yeast nutrient which requires high temp to kill it to be usefull.
