Full written recipe Malvani Masala
Prep time: 10-15 minutes
Cooking time: 20-25 minutes (excluding drying chillies time)
Serves: 600 grams of masala
Ingredients:
BYADGI CHILLI | बयादगी मिर्च 300 GRAMS
SANKESHWARI CHILLI | संकेशवरी मिर्च 50 GRAMS
PANDI CHILLI | पांडी मिर्च 50 GRAMS
CORIANDER SEEDS | धनिया 80 GRAMS
CUMIN SEEDS | जीरा 15 GRAMS
CARAWAY SEEDS | शाह जीरा 10 GRAMS
FENNEL SEEDS | सौंफ 20 GRAMS
MUSTARD SEEDS | राई 10 GRAMS
POPPY SEEDS | खस खस 20 GRAMS
BLACK PEPPERCORNS | साबुत काली मिर्च 20 GRAMS
CLOVES | लौंग 8 GRAMS
NAGKESAR | नागकेसर 8 GRAMS
KABAB CHINI | कबाब चीनी 5 GRAMS
STAR ANISE | चकरी फूल 5 GRAMS
TRIPHALA | त्रिफला 5 GRAMS
BLACK CARDAMOM | बड़ी इलाइची 3 NOS.
GREEN CARDAMOM | हरी इलायची 12-15 NOS.
MACE | जावित्री 8 GRAMS
WILD MACE | मायापत्री 5 GRAMS
STONE FLOWER | पत्थर के फूल 3 GRAMS
CINNAMON STICK | दालचीनी 5 GRAMS
NUTMEG | जायफल 1 NO. (CRUSHED)
TURMERIC | हल्दी 10 GRAMS (CRUSHED)
ASAFOETIDA | हींग 3 GRAMS (CRUSHED)
BAY LEAF | तेज पत्ता 10 NOS.
FENUGREEK SEEDS | मेथी के बीज 3 GRAMS
Method:
To make malvani masala you will need to first dry the red chillies under direct sunlight for 2-3 days until they become completely dry & crisp, you can also dry roast the chillies in a large kadhai.
You can also dry the chillies in an oven at 100 C for 25 minutes, I always dry the chillies in the oven.
Once the chillies become dry & crisp, break the stalk off the chillies & transfer them into a mixer grinder & grind it into a fine powder.
Transfer the chilli powder into a large bowl.
To toast the whole spices set a kadhai over high flame & heat it really well, once the kadhai gets hot lower the flame & add coriander seeds, cumin seeds, caraway seeds, fennel seeds, mustard seeds & poppy seeds, mix well & dry roast the spices until they become fragrant.
Once the spices get fragrant transfer the spices into a bowl & set the kadhai back over the flame.
Further add all the remaining whole spices in the kadhai & dry roast them while stirring them frequently until they become fragrant, then transfer the spices into the same bowl & cool them down completely.
Transfer all the spices into a mixer grinder jar & grind them into a fine powder, then transfer it into a bowl.
Further mix the garam masala & the chilli powder together then strain them into a large plate using a sieve.
Your malvani masala is ready, transfer it into an airtight jar (preferably a glass jar), you can use the masala for upto a year if stored correctly.

आप के सारे video बहोत ही भारी होते है. आप की तारीफ किए बगैर रहा नहि जाता की आप मराठी खाने बनाते हो तब आप मसाले का बनाने का तरीका ठीक मराठी भाषा मे बोलते हो ये सुनकर अच्छा लगा। तब लगा आप cooking दिल के गहेराइसे बनाते हो। वरना बहोत video देखे सबको दूसरी भाषामे बोलने को शरम आती है या मराठी नही आती बोलने के लिए proud fell करते है. मनसे आपको आशीर्वाद. Sir, I am a fan of your recipes. I am hard-core malvani. My malvani masala recipe has come from my mother. All the ingredients are perfect except green elaichi! As far as my knowledge goes, we don't add green elaichi in malvani masala. Also we fry red chilies with just few drops of oil and on low heat.

Malvani in me is jumping with joy..it's a summer tradition in our houses to make masala for that year ..and yes in very little oil, you have to roast the chillis too..this is amazing ..this is❤️ ...waiting for your malvani chicken and vade (kombadi/saguti vade).Just like tambda rassa of kolhapur ,we malvanis have bango rassa with bones.

whenever I see your Maharashtrian recipes I just love to watch because you keep the authenticity of the dish. very excited about the next dish .try vade with chicken. it is a very famous dish kombadi vade.bas mirchi jo hai aap kitna bhi dhup me sukhale thoda kadhai me dalke garam karna padta hai .ham jab badi quantity mai masala banate hai to thoda aur garam karana padta hai.nahito chakki vale vapas garam karavana padta hai.aur masala jyada tike useme 2 thing ke khade dal dijiye.2 hing cube 5 kg masale me kafi hote hai dedh sal take chlta hai masala.

Being a Malvani person I amazed with the fluency you have in not just speking the local language words but also adapting the local traditional knowledge with such a detailing. Thank you for bringing the local cuisine from our soil in authentic ways to the outer world. A small tip.. you should also try सोलकढी -Soulkadhi with the heavy Malvani meals. It's good for better appetite, reduces acidity, also helpful in effects of summer heat or sunstrokes.. Must try it, but be sure that it has been prepared by using Kokum or Aamsul ( Dried Kokum ), fresh wet coconut milk & not by using Kokum Aagal ( Kokam Ras).. 😊🌴

Wow this is really a very good mix of all dry spices. Not sure where I could shop for all those red chillies in Delhi Market and the other dry spices some of the names I haven't heard of as yet but am going to try get them and make my masalas to take back home with me to USA. Thanks.
