Maranao Chicken Piaparan Recipe (Regional Eats)

Maranao Piaparan a Manok recipe:
a. for the soup
3 cloves of minced garlic
2 red onions sliced
1. sauté garlic and onions then add chicken
2. add water (enough to cover the chicken)
3. add palapa (1 tbsp or it depends if you want it to be spicy)
4. add Turmeric (1 tbsp)
5. salt to taste
a.2 after the chicken has boiled:
1. remove the chicken
2. Add 1 cup of coconut milk
3. put vegetables of your choice (chayote + cabbage)
b. piaparan a manok
b.1 While waiting for the chicken to boil, in a separate bowl:
COOK:
1. mix the shredded coconut (2 cups), turmeric (2tsps) and palapa (2 tbsp more or less)
2. in a pan, heat coconut oil
3. add the bell pepper (1 whole sliced)
4. add the mixed shredded coconut and cook until fragrant
b.2 after the chicken has boiled:
1. add the chicken to the pan with the coconut
2. mix and leave in the pan, on a low fire, for about 10mins.
Plate and enjoy!

I've always loved making food videos and that's how it started. KZfaq starts off as a passion. Dont get into it if you are looking to make it your job. It doesn't work that way :)
Why arent you on TV?
Because the internet is easier and its free for you guys hahaha! Also we are currently working on producing TV shows ourselves and i have some TV shows floating around.

Actually it came from mindanao its a product of maranao people and then they imported it here in manila so that maranao that are living here could buy it easily w/o going back to its places came from..

As a cultural anthropologist, I cannot express enough how grateful I am for content like this, as Pinoys tend to look at their identity and heritage through colonized, homogenous lenses rather than celebrate (in a non-touristic) way the rich cultural diversity our indigenous and Islamic communities have to offer. I never expected someone who is from the elites of Manila would discover the food here in Mindanao. I admire you so much Erwan for being so patriotic in your passion which is cooking. Thank you for recognizing Mindanao and show to the whole Philippines how authentic and delicious is the food here too. FieL I strongly disagree. First of all, I do not watch or follow Anne Curtis despite her stardom. I'm not against her because I think she is a very intelligent and talented actress. But I'm not into her work. I prefer Erwan's way of showing his creativity. You should look deeper than the superficial and obvious. You see, there are Filipinos like me who long for this kind of content: Raw, honest, not showbiz and quality videos. We are a proud race scattered all over the globe, introverted but always thinking, adapting to different cultures but hungry to learn about our ethnicity and roots. Most of us don't even know what treasures our country has! His cutting skills and pretty face don't matter. The rich, well-researched content of his videos showcases the vast and diverse culture of Filipinos in a more intimate, honest and artistic manner. I am Filipino and I truly, truly appreciate this. I can see his passion in telling a story. I enjoy the raw artistry and presentation of his videos and I'm glad he is endorsed by brands so he could continue his projects. Moreover, Erwan 's videos reaches a broad audience across the globe, including Filipinos like me who don't have access to PH TV shows. Him sharing knowledge of our culture through geography, history and cuisine is very much valued. Merci, Erwan.

When I was studying in Iligan my favorite was beef randang and my all-time-feast-for-only-25pesos-busog favorite was and still is "pater" with lots of palapa! Yum! I'm salivating just thinking 'bout it 🙃🙃🙃🙃🙃🙃

Absolutely LOVE this video! I moved to the US when I was 10, now 23, and I didn’t even know nor did it cross my mind that there are different religions and different types of food in the motherland. At least not this different from what you usually see with traditional Filipino food. Love it! Please do more of these!

I dont know you in person,but seeing you go explore that muslim area in quiapo and trying out maranao food and even cooking it in your kitchen with a mranao herself, confirms that you really are an open-minded person. Im saying this because most of the non-muslim filipinos i know in luzon and visayas have the negative notion about muslim filipinos based on what they hear from the mainstream media. And you totally get it. Muslim filipinos have a significant number in philippine’s population but our cuisine is still very unknown to the rest of the country. “It has to get out there more.” I do agree. ❤️

I'm originally from Mindanao, not a Muslim though, but I love seeing pieces of Mindanao being highlighted in media, especially about Muslim Filipino culteres in the island. It helps us get to more about our country and people. And I love Palapa! Just mixing it in your steamed rice takes your meal to a whole new level. ;-)

Traditional food from different parts of the Philippines should be showcased more. Local government should help introduce their native fare. Maybe they could put up an area where tourists & locals could sample all of them in one place. I have been to different parts of the Philippines but, i must admit that i've rarely tried local dishes. I have not tried them, not because i don't like the food but, because i don't know anything about it. Only the popular dishes are the ones i got to try. Sometimes a friend introduces some of their traditional food because they are locals of that area & they want to share with you a bit of their culture. You're lucky if you've got a local showing you around. They always tend to know the best food & places to eat at.

my maranao friend cooked this yesterday for our Iftar..It is one of my fave from their tribe.It is like a celebration in the kitchen when you are around while they are cooking..sharing culture ..knowing other peoples root..bridging understanding and yielding respect.

I met a friend who happens to be from Maranao and upon knowing him I got so intrested about their culture and all. We had a discussion about schools should start including subjects related to Mindanao/Muslim etc so we can better understand each other. My perspective about Muslims have changed when I met him. This dish looks delish, I will try it. Thank you for sharing.

as a maranao, i find this really awesome--- to see our own dishes be shown and tried out by someone that's not a maranao but still love the taste of them. also, i agree; these types of food should be recognized and discovered more because they really have that original & authentic taste that deserves to be in food places everywhere. thank you, Erwan!

What a timely video, Erwan. This time last year, the Marawi siege was in full swing and the Maranaos had to endure hell on earth. That's why I think it's great that you featured their food and culture here. And, I agree that the food of our Muslim brothers and sisters is under represented in Filipino cuisine considering that it's one of the oldest regional eats in the country. Thank you for this video! 👍

oooh speaking of inviting people, it would be nice if you invite people like haffy--not "professional" chefs, just someone who loves cooking. I just feel that it's more authentic. Traditional food such as pater (also another popular Meranao food) deserve some recognition. I, for one, am very interested with other reional food

Rendang is not originally a Maranao food, it is from a Sumatra in indonesia, which was heavily influenced by Indian style of cooking, common in southeast asia, with a slightly lighter/brighter taste, that's why Thai Curry and Rendang can taste a lot different than your usual curries in India, due to absence of some spices like cumin, coriander, fenugreek, and with more ginger, lemongrass, lime flavors...Rendang popularity easily spread throughout the whole Indonesian archipelago into southern Philippine and Thai areas...

Maranao beef randang has a totally different taste compared to other beef randang because of the SAKURAB which is only grows in Lanao area.

this is so good! Filipino dishes are so diverse.I guess it takes a lifetime to eat all our regional food. I am from Mindanao but I've never tasted maranao food.please feature more of this!

Chicken curry is different but similar. The turmiric is used for the food coloring but this dish has this “palapa” special ingredient that makes it different from any other dishes.

Nakatikim ako noon nito sa palengke ng Binangonan Rizal, syempre pa prepared by Muslim. Grabe hindi ko malimutan ang sarap ng lasa.

Thanks erwan for featuring meranao foods as well as its glimpse history. Actually meranao loves turmeric and "palapa". Almost all our dishes have it. You should try also " BEEF RANDANG". Proud meranao here native in Marawi City.

There is no need to find similarities with Maranao and you dont have to go outside Malaysia to find Maranao. Iranuns of Malaysia are 99% related to Maranaos of Mindanao. Iranuns speak deeper Maranao language.
