Street Food at Home - Nasi Goreng - Indonesian street food style fried rice recipe, with extra chili sambal and extra petai (stink beans) - this is one of my favorite types of fried rice in the world. #IndonesianFood #nasigoreng #streetfood
I’ve taken quite a few trips to Indonesia, and I love the people, the food, and the diversity of the islands. Back in 2016, my wife Ying and I spent a couple weeks in Jakarta, Indonesia. While I tried lots of amazing food, one of the stalls I loved, which was right below the condo where we were staying, served nasi goreng petai - stink beans fried rice. On some nights when we didn’t have other filming plans, I would go downstairs to get a plate, and it was perfect. Fried rice + stink beans - for me it’s about as comfort food as possible.
Ok, let’s get started on this Indonesian street food recipe, but remember that this recipe is very customizable, and the only real way to make it is to taste test it and make it they way you like it.
For the pickle:
2 cucumbers
½ large carrot
20 - 40 small birds eye chilies
2 - 3 tbsp sugar
2 - 3 tbsp white vinegar
½ tsp salt
For the sambal
5 - 20 hot chilies (in Thailand I used Karen chilies)
3 cloves garlic
1 small shallot
½ tsp salt
For the crispy shallots:
Shallots
Salt
Oil for frying
Emping (melinjo crackers) if you can get them, or shrimp crackers
200 grams - 300 grams - Day old rice
2 eggs per plate
2 stalks stink beans, or a handful
½ tsp pepper
½ tbsp soy sauce (to taste)
1 tbsp kecap manis (sweet dark soy sauce)
METHOD:
Chop and mix all the ingredients for the pickle. Adjust vinegar, sugar, and salt to taste. Let it sit, and the juices will start to come.
Peel the shallots, and slice finely. Mix in a bowl with salt, and massage as much of the shallot juice out as possible. They will fry more crispy the drier they are. Deep fry in oil for a few minutes until golden brown and crispy.
If you have emping or shrimp chips, quickly deep fry them.
Add some oil to your wok, heat, and fry a couple of eggs - set aside to drain.
For the nasi goreng, start with the fresh sambal. Pound chilies, garlic, shallots, and salt until coarse and the oils come out.
Add about 2 - 3 tbsp oil to your wok and wait for it to heat. Begin by frying the sambal curry paste you just pounded - fry until fragrant. Then add your stink beans and mix and fry for about a minute. Crack in an egg on the side, let it sizzle for a few seconds before scrambling it, and mixing it into the sambal mixture. When the egg is scrambled, add in your rice. Mix continuously on medium heat, making sure you really break apart each grain of rice. Season with soy sauce and kecap manis, and some pepper. Stir fry until each grain of rice is individual and coated in the soy sauces.
Serve on a plate, fried egg on top, crackers on the side, cucumber and tomato for garnish, and pickle on the side. Enjoy!

As Indonesian living in Bangkok, nasi goreng is ultimately one of dishes I miss so much. It's simple yet delicious that you can eat literally for the whole day, as breakfast, lunch and dinner. The amount of pete you put in your nasi goreng has brought it to the next level. Selamat makan.

This is my most favorite food in Jakarta. I lived there for almost a year and i always eat their food. I am a Filipino but i love indo foods. Missing Jakarta so much specially my loving son. Coz he is there in jakarta right now.

Geez, you took me on a ride man! First time been to Indonesia in 2009, three more times since then, last time in 2013, so a few years in a row, wow. My favorite place on Earth, so far away from home, so safe and chill, the ocean and the surfing... MAN you rode me straight into the Feels town! And nasi goreng has always been my favorite local staple. Thanks for taking me back! Miss it so much.

For a Non-Indonesian, you have gone unbelievably extra miles to prepare this Nasi Goreng. This is a tremendous job, Mark. Love the fact that you did your research and paid attention to the tiniest details (example: you mentioned how street food vendors in Jakarta have a more round and flat mortar as opposed to the one you have). You prepared everything from scratch. This is truly remarkable. Thanks for the video! Good job!

Just like my grandma used to cook it who was born and raised in Indonesia. Really well done. In the Netherlands stink beans are hard if not impossible to find, so she used normal big green beans and sometimes mixed up with some paprika (bell pepper) and mushrooms. To still get the bitter/sour taste we added Atjar (nowadays called acar, which is availble in many flavours). But you should have used MSG (in Indonesia it's called Ve-tsin) for it's typical flavour. And if you really want to add some incredible flavour start with a touch of Trassie Oedang (fermented shrimp paste) with your sambal. But beware the smell when cooking as your entire kitchen will stink of it at first and many people dislike it if they don't know what it is, but for flavour it's absolutely amazing.

Hey Mark, I'm a daily chef at a famous 5 star hotels in East Jakarta. I just here to suggest you another greatness of Nasi Goreng that I usually made this almost everyday. My fav one is Nasi Goreng Bali and Nasi Goreng Padang also last but not least are Nasi Goreng Cabe Ijo with salted fish. This are my top 3 of Nasi Goreng. Thanks if you read my comment.

Of all the nasi goreng recipe i've seen on youtube, this video is the most identical of how kang Nasi Goreng cook in Indonesia. He even make bawang goreng, acar and krupuk. Something that usually doesn't appear on all of the video i've watched. Also, nasi goreng petai??? This one really makes solid 100 point for the video.

Love it Mark!!! Glad you love stink beans. Lol You know what, you should try the countryside style(not Jakarta). They usually cooks the fried rice with charcoal stove. It gives more aromas to the dish. I really really really recommend you to try that one. Love for your fam!

It’s amazing the way you put all the little details into your nasi goreng. We love street foods, coz it’s hard to pull off for home cooking, but you made it! nasi goreng is a dish that everyone can access its ingredients from the kitchen counter, and cooking it is all about our creativity. A little bit of (extra) detail you might want to consider next time, it would be even more fragrant if you could use fermented garlic instead of regular garlic as part of the seasoning, along with the ground shallot and chilli. Fermented garlic can be made: drown 250 gr finely chopped garlic and 2 ground candle nut in cooking oil and leave it in room temperature for two days in a sealed container,, it’s an on-the go seasoning for nasi goreng or any other stir gried dishes that can last for months in the fridge!

There are prawn cracker, garlic cracker and emping that can be used as topping on your fried rice. Emping is the ones that’s made from melinjo. Completely different taste from shrimp cracker but compliments nasi goreng just as wonderful. We love watching your channel, thank you Mark!

The MOST Indonesian nasi goreng a foreigner ever made!!! The details! Yesterday's rice, fried shallots, acar with carrots and chillies, the deep-fried brown eggs, not forget to mention the tomato and cucumber garnish (i don't get it too like we alr have acar tho but this always came together in set😭) and even you enjoys stink beans😂 for the kids ver you can just exclude chilli in the sambal (so it just grinded shallots and garlic) it'll do the job!👍 Anw thank you i enjoyed this vid so much, omw to subscribe xixix

This recipe is approved by Indonesians 🇮🇩, good job👍👍 Probably just correcting the information: melinjo chips (or "emping melinjo", but we usually drop the "melinjo" because "emping" usually refer to melinjo chips) are made of the seed of the melinjo tree and usually taste a bit bitter. We also have prawn crackers known as "kerupuk udang" made from prawns and tapioca. So they are two different things :)

what I love from nasi goreng is its simplicity when hungry in the middle of the night all you need is rice, eggs, shallots, garlic, sambal , kecap and salt, and you get a fried rice!

@@doko980629 not every food always using MSG to make a delicious menu. I'm cooking in 5 star hotels in Jakarta. And we're NOT using MSG (even we don't order every MSG from supplier) to make a delicious food. Just put salt, pepper and sugar to 'duplicate' this MSG.

This is by far, the best Indonesian street food style nasi goreng cooked by foreigners. As an East Javan, fried shallots or "bawang goreng" is always a must when you cook savoury Indonesian dishes. From sate padang, to kwetiaw goreng, bakmie (Indonesian abura soba), all the way to nasi goreng, they all go very well with fried shallots. It gives off caramelised onion sweet taste. It is sadly, almost always missing in many foreign interpretation of this Indonesian street food. Crackers or kerupuk is not a must for me, but for many Indonesians, they are a must.. And many will either use melinjo, onion, garlic, or prawn ones. A lot of foreigners also love to re-fry bottled sambal, you don't always have to. It is optional, especially for those who can't eat hot food. Anybody can just add it later on their own plate. But you use raw sambal to cook the fried rice, that's super. I would give it "kampung banget" rating for its authenticity. Not surprising, as it is being done by fellow Southeast Asian.

Mark! I love this series. Having spent most of my time in Indonesia, fried rice is also one of my favorite comfort foods. Believe it or not, it was also the first dish I was able to cook as a kid. This took me straight home.
