PARAMIN, TRINIDAD AND TOBAGO - Today we’re going on a day trip to Paramin, a beautiful village in the mountains above Port of Spain that’s known as being the spice and herb basket of Trinidad. They grow lots of delicious plants, herbs and food. Today we have the special opportunity to hang out with Foodie Nation and Uncle Clyde for an ultimate Sunday lunch meal!

Here are the main things we did today:
Aunty Julia's - After boarding our Land Cruiser and getting into the mountains, our first stop on the way to Paramin was Aunty Julia’s, legendary for her coconut bake and saltfish. We had the chance to see her make a fresh batch of coconut bake right out of her home. We ate the bake along with sal fish, sauteed down with tomatoes and onions. We also had some fresh chocolate tea with great spices and bay leaves.
Uncle Clyde - Next we headed over to Uncle Clyde’s place - he’s a food legend, does videos and recipes for Foodie Nation and he’s just the greatest Uncle you’d ever want to have. He loves to cook traditional Trinidadian food using local and natural ingredients. First we walked around and some of the ingredients we were going to use for lunch. Then we tasted some of the fresh fruits.
Next we cooked a massive lunch that included a huge pot of stew pork, a variety of provisions and plantains. It was an unforgettable lunch meal experience, high in the mountains, overlooking the sea in Trinidad!

I hate how foods like this are overshadowed by mainstream food. Foods like this need to be showcased more. Looks so unique but similar to other foods but looks so damn delicious! It makes me mad I can’t just easily get this food from where I live. Definitely putting TnT in my list when I get to travel more in the future. I am a big foodie and would love to experience this cuisine!

You could always make it yourself at home to get an idea of how it will taste. That's what I did with chicken Karahi which Mark cooked at home during covid and let me tell you - it's a fantastic dish!

This is amazing to see. The overall landscape is inviting. The people around are welcoming and are inclined to to let you have a taste of their own local dishes. Mark Wiens never disappoints. they are also far away from fast food and GMO wheat so they are a lot healthier than many in the so called first world...frankly they seem to be living in a much better place than me

KFC in independence square Port of Spain Trinidad sells the most kfc worldwide every year. subway, McDonalds pizza hut. dominoes, u name it we have it here. Its just that we have a saying here in trinidad.. Buy food is never as good as cook food. Meaning fastfood cant compare to home cooked meals

Mark, I absolutely love that you captured this traditional side of Trinidad with the food and the culture. Because of western influence and American franchises, we have become very Westernized in the food we eat and the things we do, along with the way we carry about ourselves. But what you have experienced here is what the culture used to be before the influence took over. Paramin is almost as if Time stood still

Hi Mark, I am so happy to see you in Paramiin, that's where I am from, you have to be there for the Christmas holidays, then you will know what Paramiin is all about. I came to Canada in 1975, I took my children there every year, sometimes even twice a year, I traveled back there for 27 years, and stop, because of health problems. I missed Paramin so much, there's no place in the world, that is as nice as Paramiin, every body up there knows one another, the love we share is unbelievable, actually the cave belongs to my father, Octave ( Nonom) Romany . Julia is my niece in law. Enjoy Paramin,everything up is organic, even the water comes from the river, and every one lives to old age, you will not want to go back to your country. May God bless you richly for your interest in my village, for showing the rest of the world what nature is. Actually, Paramin is the third tallest mountain in Trinidad. Also Clyde is my relative. Blessings from my heart to you all

Pommecythere is one of many unique and special Caribbean fruit- very sweet and addictive when ripe, and makes a superb chutney when half-ripe (doubles anyone? 😍) Chow is indeed a common feature when ‘liming’, it is a seasoned, peppered 🌶️🔥, fresh fruit salad- the most popular choice is mango, but actually any fruit or complimentary fruit combo can be used, and there is a cucumber version made as well, and is normally eaten at the front-end like an appetizer Pimento pepper was actually used a lot in this video but not explained enough; it is just as important as the ‘green seasoning’ for prepping Trini dishes. This pepper can safely be eaten raw because there is no heat (we have other peppers for that), but it is packed with immense flavor instead

Uncle Clyde, he is such an amazing man. Food, so colorful, the tea drink seems so aromatic. Hey Mark is Aunty Dolly accompanying you. I heard her beautiful accent in the back but you didn’t show her in this episode. Trinidad is so green and luscious. Everything is cooked and prepped from scratch. So much variety of food. Uncle Clyde’s vegetable farm looks so well cared. Coconut bread came out so good. People are so hospitable. Btw nice hair cut Mark.

The Tom Tom is a nod to our West African heritage. Called fufu on the African continent (any pounded starchy root vegetable). I recall my grandmother pounding plantain in her mortar and pestle. Delicious!!

i watch many fufu videos, and the way they recommend to eat it is to dip in the stew and swallow...allyuh could vex if allyuh want but I find that is some stupid BS, and goes to show that not everything "traditonal" is necessarily correct. what is the point if you only going to swallow it? in fact, the whole pounding part is ah waste of time because pounding don't change the taste of anything. In Mark 4th Trini video he went to Brasso Seco, and you see the lady do "boil & fry" method with dasheen/taro which to me is the best way to go. It boiled first! so it soft already and could soak up the stew 10 times better than fufu, and no wasting time pounding anything...even Uncle Clyde plantain could have sliced up right after it boil ready to serve...no loss in taste, the texture is better and you can chew and savor your food...

I love my boil provision; I does mix yam cassava dasheen and if ah have plantain it going in too, that or de green fig whatever it have in de house, boil n fry style with curry goat 👌🏾

and one thing that I like that Mark does is he goes to the village to eat instead of a fancy restaurant and wooooow. That's the same way we say it in Haitian creole at 19:46. Man, I just love the Caribbean. We are so similar than we think and I am still learning.

Awesome video! Roucou is called annatto or achiote in other cultures and the bay leaves used here are also called ciliment leaves. They come from the pimenta racemosa, West Indian bay leaf or bay rum tree.

Disagree! FN has proven to be a bunch of cheapskates…is ah Sunday lunch video… yet no crab n dumpling, or coocoo n crab/callaloo or breadfruit oildown, dey could have make curry goat to go with boil n fry provisions (yam, cassava, green fig mix)…dey had ah good stew pork, stew peas Mac pie, boil dasheen and plantain…sorry to say but that was very underwhelming

Make it a Saturday or Sunday excursion with family and friends as we call it in Barbados 🇧🇧 becoming a Bajan Tourist in this case A Trini Tourist in your homeland. 🇹🇹 Trinidad is much bigger than Barbados 🇧🇧 so I am quite sure there are much more hidden gems 💎 to discover.

The unique thing about Trini food is that it is well seasoned before and while cooking. Then you eat. Food from a lot of other countries are seasoned after cooking while you're eating it !! Trinidad & Tobago. West Indies.
