You know umami from food (or your taste buds do!) but what about in a cocktail? I made a Martini with mushrooms, sake and some really crazy garnishes to create a real umami concoction. This Martini is unlike any you’ve had before, thanks to soy sauce-infused pickled mushroom, mushroom flavored olive oil and the green tea ice. Sounds like a lot, right? Check out the detailed recipe down below. Cheers!

Soy Sauce-infused Pickled Mushrooms:
· Pickled mushrooms
· Salt-reduced Soy Sauce
Stuff a small jar with pickled mushrooms and cover with salt-reduced soy sauce. Place in the fridge for at least 24 hrs.
Mushroom flavored olive oil
· 50 ml (1.33 oz) olive oil
· 3 g dried mushrooms (I recommend porcini)
Blend ingredients in a blender then filter through a coffee filter. Keep in the fridge (if your olive oil solidifies add a small amount of other vegetable oil before blending).
Green Tea Ice
Make green tea (0.5 g/100 ml) then strain and place in the fridge. Cut up the ice to your desired sizes.
Umami Martini:
· 60 ml (2 oz) KI NO BI Kyoto Dry Gin
· 15 ml (0.5 oz) Shirayuki Sake
· Chill with green tea ice
· Soy sauce-infused pickled mushroom
· 3 drops of mushroom olive oil
· 3 drops of soy sauce
Chill the mixing glass with the green tea ice. Dump the ice, add gin and sake and stir with more green tea ice. Strain into a chilled martini glass, add a soy-sauce infused pickled mushroom and 3 big drops of mushroom olive oil, followed by 3 drops of soy sauce (on the oil drops).

Will you try combining mushrooms and cocktails? Or have you already? PS: I swear we shot this episode before Anders Erickson made his “pee ice” with chamomile in the collaboration episode! 😂

I tried various classic whiskey cocktails using bourbon and regular pickled mushrooms as I once bought an overstocked pallet of gourmet products that had 3 full cases of pickled mushrooms in gallon jars. I particularly like my version of a Manhattan using sherry, orange bitters, and a mushroom garnish.

Loving your martini recipes, my absolute favourite cocktail, theres nothing quite like it. I wonder what you think of Luis Buenel's martini recipe? Its super cold, super dry (with just a wash of vermouth and bitters) but shaken (not stirred)
@KevinKos
@KevinKos 3 жыл бұрын
Thank you! I love Martinis. I do like less vermouth in mines but in 5:1 ratio of spirit/vermouth. I am not ok with shaking it. I prefer prebatching it and put it in a freezer for a super cold result.

Next time I have a nice sake opened, I'm trying it out! Since I only have regular soy sauce, I'll mix it with some dashi to reduce the salt and increase the umami. And will use shiitake instead of porchini to stay more Japanese ;) Love your crazy recipes tho, so inventive! Can't wait to see what you have next! (still waiting for one with absinthe tho)

Such a good video! I’m writing a new cocktail menu at the moment, and am actually making a Lapsang Soochong Syrup for one of the drinks, but have just been bringing the water to the boil and letting it steep for about 10 minutes. Have you got any tips on how I might be able to get the best results? Sadly I haven’t got a fancy tea timer like you!
@barstoolbanter7212
@barstoolbanter7212 3 жыл бұрын
I would recommend dropping the heat before it comes to a boil, green tea can burn easily. For a strong syrup, I always recommend using more tea, not more time. Steeping for too long can lead to off flavors. Cheers!
