As a baker myself even with a blast chiller making, decorating and serving a cake in an hour and a half is literally impossible unless you're using boxed mix and canned frosting. Assuming all the ingredients were already at room temperature the average cake takes about 20-30 mins to prep and mix, 30-40mins to bake, takes about 15-30mins (depending on efficiency) in a blast chiller to cool enough to frost then takes another 15-20 minutes to frost and decorate. If they wanted spectacular cakes for a special episode then the bakers should have been given more time.

Some of these challenges got to show you how important luck is. How many times have chefs just squeezed by because someone else had a worse dish or talented chef were eliminated early because of the elimination round or pressure test challenge.
