Mathiya Atta :
525 gm - Whole Moth or Moth Atta
225 gm - Split Urad dal or Urad dal Atta
Mix it and clean with cloth and grind it fine, use as a Mathiya Atta
Total is 750 gm
Ingredients :
Take A pan and add
1 +1/2 Cup - Water (250 ml )
50 gm - Spicy Green Chillies Coarsely Grinded
3 tbsp - Salt
mix very well and close the lid and boil the water
Switch off the flame and add
1 +1/4 Cup - Sugar
Take big Vassel and add
1 tbsp - Ajwain ( Carom seeds)
1 tbsp - Ghee
strain Chilli water in this keep little water aside ,cool completely
Take a
750 gm less 1/2 Cup - Mathiya Atta and add
1 tsp - Hing (Asafoetida)
add liitle little above atta
and mix very well
make a hard Dough
Put total
1+1/2 Cup - Above Water (we have taken 1 Cup water rest u can use normal water)
Pound it properly with the pestle properly till smooth dough
Make a roll and make a
Take a bowl
2 tbsp - Ghee
put rest above
1/2 Cup from that use only 2+1/2 tbsp- Mathiya atta little by little
beat with hand
make a small balls with the help of thread or knife
put balls in above ghee bowl and mix it very well ,keep lid above it,take one and roll it thin chapati
and keep it in cloth and make aa the mathiya and roll it
fry it in slow flame till little golden, keep it in strainer and serve
