准备汤汁香料:
虾米 10 g
红葱 2 粒
南姜 小块
生姜 小块
蒜头 2 粒
香茅 2支
红番薯 1 粒
高汤
咖喱粉 辣椒粉
豆酱
糖
盐
生抽
甜酱油
其他材料:
黄面
豆腐
青椒
芽菜
全熟蛋
Ingredients (Diana Aw)
1. Sweet potato 150~200g remove skin and cut slice. Steam for 15min till soft. Blend together with 200g stock
2. Lemongrass 2pcs smashed
3. Curry powder 2tbsp
4. Chilli powder 1tbsp
5. Water appropriate amount
6. Tofu 2pcs cut small pieces
7. Stock 400g
8. Green chilli cut slices
9. Calamansi 5pcs cut half
10. Hard boiled egg 2pcs cut half
11. Bean sprouts
12. Yellow noodle
13. Bean paste 1tbsp
14. Potato starch solution
Blend the following spices
1. Red onion x2 pcs cut slices
2. Garlic 3pcs
3. Ginger small piece
4. Galangal small piece
5. Dried shrimp 10g soak till soft
6. Little water
Seasoning
1. Salt 1tsp
2. Sugar 2tbsp
3. Light soya sauce 1tbsp
4. Sweet dark sauce 1tbsp
Method
1. Combine the curry powder, chilli powder and water in a bowl
2. Fry the tofu till golden brown. Set aside
3. Add 6tbsp oil in the pot, stir fry the blended spices till fragrant. Add in lemongrass and stir. Add Curry n chilli powder mix and bean paste and mix well. Add in sweet potato paste and stock and mix well
4. Add seasoning and bring to boil
5. Add potato starch solution while stirring
6. Blanch the bean sprouts followed by noodles and arrange in a bowl
7. Add in egg, tofu, green chilli and calamansi
8. Serve and enjoy! 💕
