KASTURI METHI -1 SPOON
HALDI -1/2 SPOON
LAL MIRCH POWDER ¼ SPOON
BUTTER OR GHEE- 30 GM ( HALF FOR COOKING AND HALF FOR TADKA)
GREEN CHILLI-2 NO
OIL- 1 SPOON
DRY RED CHILLI-2-3 NO.
SALT TO TASTE

Can have any scientific reason for adding sugar to avood colour change during blanching the methi or palak. Nice done 👍🏻

While adding sugar 4% of total solution say water; retain colour and texture of vegetables The use of trehalose and maltose (present in sugar)in the blanching solution reduced the solute loss while increasing the water loss. It’s very short explanation for this hope this is useful. Just say in simple word that sugar also act as preservative so it help to retain colour, texture and favour even after water loss of any vegetable.
