For everyone saying you're removing all the flavor when you wash away the tomalley this isn't a Maine lobster or any other lobster for that matter this is a Florida lobster or a rock lobster. The tomalley in a Florida lobster is incredibly bitter and will actually ruin dishes if left in or ruin stock if boiled whole, which is why it's removed. Maine lobster? no problem leave it in and it tastes great, don't do it for a rock lobster it'll ruin your day LOL

after remove the lobster body meat off from the shell, don't rinse it off by water because all the sweet flavor inside the meat can be washed off, you want to reserve the good sweet taste. avoid rinse it by water, if u have to, only rinse it lightly quickly.

Stone crabs can only be harvested from Oct 15 through May 1, and only the claws are taken. The crab can regenerate the claws each time it molts. Lobsters can only be harvested from Aug 6 through Mar 31 and commercial fishers generally have a quota they're allowed to take, determined each year by the state. It's in everyone's interests to keep the lobster and crab population at sustainable levels, which is why poaching and harvesting out of season are treated so harshly.

Fish industry in US is 100% sustaintable all spieces have strict regulations for its commercial exploitation , in the case of the stone crab is even more sustaintable because by law the fisherman can cut only one arm of the crab , and then the crab is realeased , the next year a new arm regrow (respawn ) naturaly and is harvested again .
