interesting that he compared it to a salad - ive been thinking for a while that a lot of modern presentations are nothing more than salads arranged artfully on a plate, usually with a protein thrown in as centerpiece. its become the new standard formula - take a protein, cut into a few smaller pieces, scatter on the plate. puree a veg or two and smear them on the plate. scatter around a couple larger pieces of some vegetable or something and then garnish with 3-4 types of herbs or baby leaves. et voila! a world class dish! buts really just a bunch of vegetables with a sauce, ie a salad, with a protein. not that thats a bad thing necessarily, but i think its interesting to note.

ur right, well said. Ive never been able to afford to eat at places like this, so i cant speak with too much knowledge, but i somoehow like the food plates of the great masters from the 70s-90s like MPW, Nico Ladenis etc. They somehow seemed less pretentious than the little drops and streaks and smears that seem to be the norm these days.

Great cooking and creativity. Final dish is a little frilly. It's too bad that people commenting don't understand small dishes. The meat & three. The starch, veg,protein, (and stacked on the plate in that order) formula is dead.

You couldnt be more wrong, its more in the execution. Dishes like these always look better than they taste. But the oldschool way of cooking stands firm in the flavor department. Its all about finding balance, and knowing how to use salt, acidity, and sweetness to your advantage, while adding that modern twist that will make you look twice at your dish before you eat it. I try to build my style around that. But thats just my opinion.
