This excellent juicy and tender fish has lovely crispy edges. Our kids fight over who gets to eat the crispy bits. You can't go wrong with this super simple dish.

For clarification for other people, basically whatever side is flat goes up when you first put on the filet....so when you flip it the second time it’s cooked and presented better. I prefer to let the pan heat up for 3 min with a decent coat of olive/whatever oil, then cook medium flame 8-10 min per flip. Add the condiments like butter and garlic afterwards ... many different ways to do it though.

It looks yellow but the instructions are very helpful as I did not know that about using the fish to "swim" on the pan bottom as the oil keeps getting hotter!

Is this pan not compatible with beef or pork, only for the reason that it is cross contamination, or it isn't good for cooking it on that pan at all? Also, wouldn't it be good to cook what ever you want on that pan after you wash it clean? lol thx
