A bowl of Miso Ramen that you'll never want to finish. At first this bowl by Shibata Masahiro seems simple - but there is a lot more to uncover. A delicious Tonkotsu blend, wonderful and punchy flavors, and some of the best chashu in the business. Ramen really doesn't get better than this. This week's ramen was made in conjunction with Saiai Niigata, a project celebrating the region of Niigata through ramen and this Miso ramen is an excellent representation of the region where Shibata-san was born.
