One thing I do with rice is make instant rice by cooking the rice, we use brown rice, after it is cooked chill it. Then we break up the rice clumps and spread a thin layer in a dehydrator. When dry we pack in canning jars and vacuum seal. Such a time saver and cheaper than store bought.

Your soup looks fabulous! I always thought you are not supposed to can rice, correct me if I'm wrong. I also noticed you put the weight on and started timing before the steamed vented for 10 minutes. You opened the canner and immediately took out the jars, I think they are supposed to sit in the canner for about 10 minutes before removal to adjust to temp change. My jars are always steaming hot out of the water when I fill, for temp change. I take one jar at a time and put the filled one back into the cooker because the water is still hot. I'm nowhere near a pro canner but thought the above rules apply when pressure canning. Am I wrong? Thank you in advance...

Thanks Kelly! I've heard you can't can rice too, but most of the soups in the store contain rice? right. I had a family member that worked for a cannery and she told me; sure you can, just add it in raw like we do. So I've done that since. What you noticed was some quick editing, and regardless it didn't hurt anything. All of those jars have been eaten ;) Mine jars were very hot too, but I don't always leave them in water, it depends on the situation and what I"m canning. Thanks for your feedback and observations. There are no "Pro" caners unless you own or operate a cannery. We all are doing what we are taught by those women or men who taught us. I would say follow the Ball or Kerr Canning manual for safety. I'm not a how to channel, I'm simply showing how I do my cooking and canning and living life. Nothing more or less. Thanks again!

Modern Pioneers Thank you for your reply... Your soup really does look fantastic. My husband said the same thing you did "We buy it at the store with rice" So I will be making your soup. If it explodes, he's cleaning it up! HaHa... :)

I promise it won't happen, but remember, for pints, 1/4 cup of rice at most... I started with a little and worked my way up. My husband is always around too - ha! :) he loves when I can, what's left he gets to eat. LOL Blessings !

ok.......I'm new at this, but did I just see you water bath/pressure can?.......I use a pressure canner just like yours, but I never pressure can with more than 3 quarts of water in the bottom......Would it be ok to make this soup like that? or Does the water have to be over the jars?.......beautiful soup by the way! Can't wait to make it.....TOMORROW!!!

@@ModernPioneers lolol.....just now saw your response about an hour after taking mine out of the canner!! I canned them my usual way, and they came out great! Very pretty in the jar....I added just a smidge of rice.......looks great, still bubbling in plenty of broth.......Thanks for your video!

My question, making this I took out of canner, it was late, so got up in morning two did not seal, is the food still good, they set out unsealed for 9 hours!

lpinto2002 I wouldn’t chance it -I’m sure you did - but make sure the glass rims are free if grease - vinegar on a paper towel works - every once in a while I’ll have one too. You are also brave to go to bed -I’ve not done that either 😳🤪

yes - we love canned soups and don't like the salt levels in store bought - I just add plain raw rice, but not a tone, just like I said; you want the rice to have room to cook really well. I think the amount would depend on how much you are canning.

We eat them pretty fast but canning shelf life -sealed is 10yrs min

Thanks for making this video. : -) Can I make a couple clarifications for your viewers? The reason you don't want to tighten the rings too tight is not to break the jars, but to allow the air in the jar to escape. It needs to escape in order for a vacuum to be created. Secondly, you add vinegar to the water not to keep the jars from getting cloudy, but to keep the pressure cooker from getting calcium stains from hard water. If you want to keep the jars from getting cloudy, use canning salt and canning gel. Stopped watching at that point. Hope this helps. Thank you for sharing your canning experience. The soup looks super tasty! : -)

+John Coffey Thanks, I mentioned that in this video as well as that information is in many of my canning videos :) I appreciate the feedback and the notes ;) Never heard of canning gel, but Kosher salt is pretty much the same as canning salt which is the only kind of salt I use other than, pink. I know you said you did editing in this video. But I noticed you put your Jiggler on your canner and then turn it on. Is supposed to turn on your canner let it vent a steady Steam for 10 minutes and then put it on and then let the pressure buildup. I've been tanning 40 years and generations before me canned and this is a safety feature that has to be done. So I'm not sure if you did that and it was edited out but maybe put that in the comment that you did vent it

I think you meant - Canning for 40 years and not "tanning" looks like we all make mistakes :) ...and yes it was edited. I too have been canning for over 30 years and never had any issues. Thanks for watching!

You should not have tipped the jars. They were not sealed yet! And releasing the pressure in the canner was not smart!! Pressure canners EXPLODE!!! If the pressure was too high, turn the burner on the stove down! You are very lucky that it didn't explode on you.

I AM NOT A HOW TO CHANNEL, THIS CHANNEL IS A VLOG. My jars were safe and sound and I've been canning for more than 30 years. I've also been tipping jars for vacum sealing for many many years and it works and is perfectly safe. Never have I had a jar burst in my canner nor break after hundreds of jars over the years.

@@ModernPioneers No, you are not supposed to tip the jars. They do not have a seal yet, and you can get the grease on the rims that way. That can stop it from sealing.

Modern Pioneers it’s not safe... changes pressure in jars to rapidly and they will explode.... it’s common sense if your training people do it the correct way let them make their own bad habits 🙄 if you don’t want comments turn comments off... DUH YOU AINT TOO BRIGHT
