This Oaxacan mole uses a spice blend and prepared verde sauce to get to the fresh robust taste of a mole verde without a lot of cooking time. It’s the easiest mole to make, but the taste does not suffer. It’s delicious!
The Verde spice blend is made with serrano, jalapeno and aji limon peppers with added toasted sesame seeds, cloves, pepitas, peppercorns and coriander.

Recipe for DIY Chile Verde mole spice blend:
3 Tablespoons ground dried chile peppers ( seranno, jalapeno and aji limon)
1 teaspoon salt
1/2 cup toasted sesame seeds
1/4 teaspoon ground cloves
2/3 cup pepitas
1/4 teaspoon ground black pepper
1 1/2 teaspoons coriander
