Please take the time to read "The Parasol Protectorate" series by Gail Carriger. The first book is called Soulless. It's a super funny Victorian era high society supernatural steampunk series where it is perfectly justifiable to be extremely angry at a vampire that is trying to eat you not because they are trying to eat you (what do you think a vampire is going to do, honestly) but because they didn't take the time to properly introduce themselves (uncivilized heathen) before trying to eat you.

“Morgan Drinks Coffee” is a FANTASTIC name for a shop. Think about it. Oh and I’ve thought of opening my own shop also and always said it would be big enough for a small stage, or at least an alcove so you can have someone play music. There was a little shop I went in one day that had a guy playing his guitar and thought that added a different element to the shop. Loved your Q&A, keep it up

Weirdest customer order I’ve had was a few weeks ago! I work full time at a roastary, but pick up shifts at our cafes every now and then. We have this one flavored coffee that we roast called “Kickersnoodle”, and it’s pretty popular at our cafes, but we only do it as a drip coffee. It’s not like a flavor you can put in a latte or anything. This woman came in the other day and asked for a kickersnoodle frappe- which was weird enough as is- and then said “oh, and I’d like that hot!” I had to explain to her that a frappe was a frozen, blended drink, and it was super awkward. She walked away with a mocha frappe, but I was just baffled 😂

Taste with intentionality is such an interesting and good point of advice. Intentionality is so important for any task/job that relies of your senses. I once asked a professional Jazz musician how he practiced and, amongst the general pieces of advice, he noted that he sets aside a lot of time to actively listen and think about the music he wants to sound like. For some reason that's really stuck with me over the years.

as an architect, we studied a little interior design as well. coffee shops have those uncomfortable bar stools to deter people from staying a long time. also, it caters to people that intend to stay for a short time.

So.... This is just an observation but.... Based on your stove clock it took you about 70 minutes to film this 30 minute video.... Honestly bravo... I would love to see one of these days though, a blooper reel of the "best" bloopers that you end up cutting out for sake of time or whatever reason.

I think I started drinking small amounts of coffee with a lot of milk when I was 7/8? It was a treat with my family to take part in socializing and spending time together on holidays and Sundays, and only just started drinking it for the caffeine rather than just the comfort when I was 16ish

Yes same! But I was a super talkative child and my family worried it would make me hyper. So I didn’t really drink coffee until I was around 19. I still rarely ever drink it, but it does remind me of socializing with family

With me and my brother, that was a small bottle of beer. We didn’t get into the high school drinking thing because it was never a big deal for us. Even now, I’m more likely to cook with it than drink it. On the flip side, I get a nasty withdrawal headache if I don’t have at least one large cup of coffee in the morning. Black.

In terms of weird orders, I remember sitting at the coffee counter and hearing a customer asking for a "hot iced tea". (Apparently just wanted tea made with a lipton tea bag so not weird in the end, but weird way to order it...)

Another Morgan who loves Star Wars Legends books! This thrills me to no end. Also, for the apron, find someone who sews and takes commissions. Speaking from experience as someone who does just that, an apron like that won't be that expensive in labor and neither would the fabric. They can also take a pattern directly off it and usually find a fabric really similar so you can literally have the same thing all over again.

A mint mocha was my very first coffee drink and still my favorite treat! I remember thinking about how strongly I could taste the coffee, but now as a black coffee drinker mochas are just straight sugar 😂 oh how our palettes can change

I've had to switch to tea after overdoing it on coffee for awhile (my body now terribly rejects coffee when I try to have it, but I may still have an ounce or two every few months, just because I still enjoy it.) But I am still all for coffee in theory and the practice/ art involved in its whole process. Your videos have a great energy and motivational vibe to them.

I work at Dunkin’ and I’ve been asked to steam cold brew too! Although, at Dutch Bros, they actually offer steamed cold brew as a normal thing because they don’t have drip coffee. Only cold brew and espresso, so I think that’s why I get asked to do it.

Bartender / Bar Manager here. On the topic of building palate and your flavor vocabulary, I highly highly recommend The Flavor Bible. The beginning of the book is structured as like a breakdown from culinary experts on the major flavor profiles of food (acidity, astringency, mouthfeel, etc). The second half is a glossary of flavors that go well together (salt and caramel, mozzarella and balsamic vineger, etc). For nice aprons i recommend checking out the company Under NY Sky. I wear the half apron for every shift i work and have several spares at home. Thank you so much for your videos! They're super informative for someone like me getting into coffee as a hobby.

My friend’s mom opened a cafe when she retired. She saved and planned for years, and it’s probably one of my favorite cafes ever. I like when people wait til they’re ready. That’s when I think businesses go the best.

I'm in the process of opening a new not-for-profit café, as part of a community centre - focused on training for people trying to get into hospo, and building community - it's been delayed because of building stuff, and COVID related stuff... Ok ok, I can comment on the steamed cold brew with a *possible* explanation. I love coffee, but sadly due to some stomach issues coffee doesn't usually love me back. Hot water extraction of any kind - drip, french press, moka pot, espresso - is a roll of the dice on whether I will feel like absolute crap after. I think it's the acid extraction. Cold brew, for whatever reason, is only about a 1 in 4 chance of killing me, opposed to 3 outta 4 with hot water extraction. Your customer MAY have had similar GI issues but still wanted a hot drink. Since the cold brew had already been extracted sans acid, heating it up from there may still have been 'safer' for them to drink.

Hi, Morgan :) My mother wad French and Danish, so I started with excellent cafe au lait around age 6. Heavy milk ratio, so not much of a caffeine spike, but here I am 50 years later, and I'm a full-blown unapologetic coffeeholic. :)

I always have mochas, they are the comfort zone for me other than plain sugared coffee… I’ve tried lots of drinks but yes a mocha is always my fave

I have a good book recommendation for you that would fit into the genres you like! The Night Circus by Erin Morgenstern! Fantasy with a hint of romance that is literally my favorite book of all time. The author has another book called Starless Sea that came out more recently but I haven't read it yet.

I own a busy coffee shop and bakery. When I'm looking for a barista, I'm much more interested in attitude than experience - and Morgan is so right on here. I'd prefer a complete newbie - IF there is that enthusiasm along with a native ability to work fast with your hands. Morgan seems to be delightfully high-strung - fast talking, very smart, quick movements. These are all things I look for. Hey Morgan - want a job??!

I was started young on coffee: I think I was mis-ID' as ADD, and given coffee as a "cure" at one point when I was 5-ish. Also I remember climbing on the countertop to drink the cold leftovers from the coffee pot.

I second the recommendation for aeropress. I understand the steamed cold brew. Cold brew is so smooth and they are trying to avoid the bitterness of hot brew coffee

It took me quite a while to come around to the idea of drinking black coffee. My father used to ridicule me for wanting to put anything in my coffee (along with other really special and precious parenting decisions he made) and having a cup of black coffee in front of me just brought up bad memories. Couple of things happened: I realized he'd also be giving me flak for going to a coffee shop at all, and of course, I realized nobody in their right mind should get hung up on anything he said or did. It's weird how many memories and experiences can get attached to the foods and drinks we experience when we're young, be they positive or negative.

Gateway drink... I worked at the Lincoln Center B&N decades ago. When the company would have cafe competitions, we would easily win each week, which meant a free drink for each employee in the store. Me, I prefer to keep my caffeine tolerance low, so I didn't drink much coffee, usually soda. But those summer weeks, I would get the caramel frap, which was like half a coffee, tasty, and sweet. For a sore throat: steamed milk with lots of honey.

Hey Morgan, if you are interested in stepping up the curl game, can I recommend the Curly Girl Method? It sounds like you are basically already on it! It goes into the theory of some curl care (avoiding silicone, sulphates, drying alcohols), as well as some handy techniques.

A bit of steamed milk on top of black cold brew gives this warm cold sensation (only on the first sips) which is awesome. I love it and do it all the time I make cold brew at home!!

I wasn't expecting to be here so early. I want to reduce my sugar intake and sweet iced coffee has become a big weakness. My fiance also dreams of opening a cafe so I've been looking at getting a part time barista job so I can develop more knowledge to help him!

You can apply to a coffee shop with no experience. Just like most other customer service jobs, you will be trained on the job, usually being trained on the register first, and then everything specific to coffee. So long as you are willing to learn, you don't really need prior training.

Late to comment, but love your channel, and the ember is for sure an awesome splurge! I got one maybe two years ago and I never realized how much I wanted my coffee to send me a push notification when it had cooled to the perfect temperature, but now it makes me smile every time. Also apron wise Williams Sonoma makes fantastic aprons.

Honestly me looking at the flavor wheel and tasting coffee over and over and over with it in mind helped me with the coffee pallet. Now I can always taste the flavor notes where as before coffee was just coffee

I was born in Brazil, although I only started drinking coffee when I was 20, some of my cousins would drink coffee every day since they were around 6! Only in the morning with milk and sugar.

It’s definitely very different based on where you live! In the US, I think it’s a bit less common for kids to drink coffee but as long as it’s done in moderation, I see no issue with it :)

Oh my gosh Morgan same 😂😂 First coffee I ever ordered was a cappuccino from Starbucks... the caffeine absolutely coursed through my veins, which was great to kick off the school day, but more importantly it gave me the speed I needed to get to the bathroom in time 😳😂☕️ #justcoffeeproblems

Here's a rather disturbing parallel to the "worst barista experience" story; I'm disabled, and for several years I used A scooter for longer distances. The last time I went to a Starbucks was January of 1996; I had just gotten $150 in cash for Christmas and I wanted to invade my local mall. When I got there, I ordered "the biggest Hammerhead you have", to avoid all the confusing jargon. The baristo gave it to me, and when I gave him the 50, he said, " we don't accept anything bigger than a 20". I apologized and noted that nothing else's was open yet, and I didn't see any signs posted about the policy. He grabbed the coffee, turned around, poured it into the sink, turned back around, pointed to the door, and snapped, "Get the hell out... You're wasting my time!" I haven't been back to any Starbucks since then. If I go for coffee, I look for smaller merchants.

Idk about back then, but it's fairly common sense that you can not pay with more than 20 dollars in fast food stores since the machines do not accept them. In fact we have to tell customers all the time we do not accept $50 or $100, and if they still try to insist paying with those methods, we have to get the manager to deal with the situation and see of we have change for it in our safe, which most times we do not. Besides, I think the guy had a right to dump it in front of your face. If you couldn't understand that he can't accept $50, then why bother. I see no problem with it. Try working in fast food and see how you like it. It gets exhausting explaining the same shit multiple times to the same fucking person why you can't accept certain money. I doubt he only explained once before dumping it in front of you. We don't dump the shit in front of the customers face unless we tried to explain multiple fucking times. Oh boo hoo you're disabled. Not our job to take pitty for you.

@@zyrge Dude I understand but I think fast food workers should be polite as it affects the status of the store in the long term. If you are rude to a customer he would probably never come back to the store.

@@zyrge I hope I never have the displeasure of being YOUR customer. The barista could have handled things differently, but chose to be belligerent. I get that being in any customer-facing position is tough. There will always be customers who are assholes. You've allowed these negative experiences to turn you into an asshole yourself. Great job!

for me who have to sell wine and took some time to learn to know how to taste, detecte the more discret flavors the way you talk about developping a coffee palate seem pretty similar good to know and that I'll keep in mind ^^

Usually, you look directly into the camera in your videos. The brief profile shot at the beginning of this video allowed me to see that, in profile, your face looks much like Iain Armitage’s, the Young Sheldon actor.

Late to the Ask Me Anything party here, so crossing fingers you'll even see this. During lockdown I found a couple bags of (old!) roasted bean coffee in my pantry. Didn't think they'd make good regular brew, so tried a weird experiment: I put about 1/3 of a cup of loose beans in a big cup, poured over a lot of boiling water, then let it sit for 24 hours. Then used this as a base for a lazy sort of a "cold brew" mocha. I call the liquid "tea-coffee" and liked it enough to use up both bags this way over the past year, and occasionally now buy medium quality single source roasted beans to do the same. So I obviously kind of like it. Have you ever tried brewing non-ground beans? The utter lack of micro-particulates is what fascinates me the most, but I was surprised by both the strength of the coffee taste, and what seemed a heightening, to me, of fruity/floral/complex flavors. If you go to Italy next year ( and drink coffee there of course) - you won't want to come back!!! It's simply better there - can't decide if its the water??... I've tried everything to reproduce it here in the states. I have a prosumer espresso machine at home, and I've tried espresso drinks at all the best places in the US, tried numerous high end espresso brands... it's simply not the same. If you are in Florence, any of the cafes there have heavenly coffee. At the Rome airport, get a cappuccino at a Cafe Kimbo bar. (**I go through withdrawal for weeks after I return from Italy). Also - the push button machines at the hotels in Italy are surprisingly fantastic!!!

Have you read any Joe Abercrombie? He may be my favorite fantasy author currently. His First Law world series (starting with The Blade Itself) are amazing, especially the audiobooks narrated by Steven Pacey. His narration is S-tier

the darth bane trilogy is great, though i think my favorite legends series is Heir to the Throne. i really like American Gods as well, though i had NO clue what was happening the first time i read it until i was 3/4ths through it. the second read was much better. my favorite Gaiman book is Neverwhere. if you like "hard-militaristic" sci-fi, i recommend the Honorverse by David Weber (first two books are free on kindle if you want to try the series first... it is a 14 book series)... the key to enjoying them if you're not huge into the hard-militaristic sci-fi imo, is to ignore the numbers. he uses a LOT of numbers, that are very hard to parse, at least to us americans. but you can just kinda... gloss over the numbers, and pay attention to the reaction to the numbers. but the main character has a near sentient 6 limbed cat.

A 16oz mocha with 4 shots is my go to drink if at a cafe. I started drinking drip coffee every morning when I was 12 and I’m 24 now. Over 10 years later I’m still all about a good mocha.

I also had a customer order a steamed cold brew once. I was guest-working at another store in our district and when I put it through, the barista just made it no questions asked. Must have been a regular order for her.

May I introduce to you "The Paper Magician" series of books by Charlie N. Holmberg? My favourite book in this series is "The Plastic Magician", but all of them are amazing! They're set in London around the 1900s, and it's by far my favourite historical fantasy series.
