this is my version of lamb-couscous tagine, the dish traditionally uses lots of spices but here i´m trying to reduce some spices and making more meat tander and delicious with easy way here are the ingredients !
01kg Boneless lamb
350ml lamb borth
150g dried apricots
200g cous-cous
400g white onion chopped
3tbs extra-virgin olive oil
1tsp garlic paste
1tsp ginger paste
1tbs tomato paste
02 star anise
1tsp ground cumin
1tsp ground coriander
1tbs curry powder
1tsp paprika powder
pinch of ground cloves
pinch of saffron
salt and pepper--as for taste
fresh chopped cilantro + garniches and some roasted nuts
for lamb stock : water,rosemarry,carrot,onion and bay leaves..
for cous-cous : cous-cous,saffron, butter,salt, pepper...

this is something easy to make with spices and ingredients I have so no excuse .Today I buy lamb and cook tomorrow. I thank you for keeping it basic and looks delicious.

I will try this recipe, but one thing your music is at the same level as your voice and it is hard to hear you. Everything else in your video is fine camera work fine, putting good information down below. I am sure your voice sounds fine when you get the music levels right. Good luck 👍

That was not bay leaf in the stock... that was a twig of thyme. This recipe looks amazing! I am going to try this!

This is not how we moroccans make tagine. So u may call it couscous with beef stew. To make tagine u need the tagine vessel. This is the least of the mistakes here. And let's not talk about the spices

Boo. Not a Moroccan Tajine at all !! Moroccan Tajine dishes are made in a Tagine, a special cone shaped earthenware utensil not a steel casserole dish with a glass lid. With its tight fitting, cone-shaped lid, a Tagine steams the stew as it cooks, catching the rising, aromatic vapour and allowing it to drip back over the ingredients, thereby bathing them in their own juices.. Terribly misleading

Hey Paul, I totally understand your point of view on this recipe, I have been working 2 years under moroccan Chef in Dubai. And I got the idea from him and people love it, so but as for my own view if you are a professional chef I don’t look the special equipment for cooking the food because food for me TASTE no matter however you prepare / cooking Any way thank you 🙏

You're using an aluminum pan. You should not make videos using aluminum pans. They are not safe. Period.
