Main diffrence is in the amount of magnets and resistance to the elements. Outrunners tend to run smoother but from my expirience have worse cooling and are less resistant to the elements and impacts so perfect for planes or things that cna blow alot air on them providing beter cooling and taking full adventage of the gaps in the case allowing good air cooling to coils, also cheaper and easier to build. Inrunners tend to cog a lot more but are also easier to cool using external methods like radiators since the coils are on the outside and the case is stationar. Another benefit to inrunner is the fact they are sealed thanks to that they are ALOT more durable when it comes to resistance to elements like dirt so perfect for ground and naval use. Also if the inrunner was fully submerged its good to take it apart and let it dry inside.

In my experience outrunners are just better. They run cooler and have more power per weight. Look for a helicopter 500 size and up helicopter inrunner motor, they are little to none vs every brand out has a outrunner for 500 size helis and up
