材料:
猪排骨 500-600克
腐竹 适量
冬菇/鲜香菇/蘑菇
木耳 适量
豆酱(粒)适量
生姜 适量
蒜头 适量
小辣椒 适量
调味:
盐
白糖
胡椒粉
蚝油
生抽
Ingredients (Diana Aw)
1. Pork ribs ~500g, soak in water for 20min and rinse. Combine with a pot of water and bring to boil. Add in few slices of ginger. Let it boil for 1min and rinse. Drain and set aside
2. Mushrooms
3. Black fungus
4. Salted soya beans 1tbsp rinsed with water
5. Fried dried bean curd
6. Ginger, few slices
7. Garlic 5 cloves, cut half
8. Chilli padi 3pcs, smashed
Seasoning
1. Oyster sauce 2tsp
2. Salt little
3. Pepper little
4. Light soya sauce little
5. Sugar little
Method
1. Blanch the mushroom and black fungus. Set aside
2. Heat the claypot and add in oil. Add in ginger and stir fry till aromatic. Then add in garlic and chilli padi and stir fry till aromatic. Add in salted soya beans and stir fry. Then add in oyster sauce and stir till aromatic.
3. Add in pork ribs, mushrooms and black fungus and stir fry till aromatic.
4. Add in water just enough to cover pork ribs. Add in salt, pepper, light soya sauce and sugar and mix well. Turn to high heat and bring to boil.
5. Add in fried bean curds and lid on. Turn to low heat and simmer for 45-60min. Off the heat and let it cover for another hour. Taste testing and add in seasoning to suit your taste.
6. Turn to high heat to boil and thicken the gravy a bit.
7. Serve and enjoy! 💕
