I live up in the panhandle and when I was a kid my Dad used to butterfly the mullet and smoked it with salt,pepper and squeeze lemon juice over it after they smoked awhile…That was over 50 years ago….good memories.

One of the memories I have as a kid is my dad hand tying his cast net in the living room and then eating the smoked mullet it caught with it. We used to practice throwing it out in the yard to make sure we could get it to open as kids.

Ian, that was a really good one. I am a mullet eating fool. The back bone is the best. You can find mullet and swamp cabbage on all the buffet's in Horse Shoe Beach, Cross City, and Branford area. I dearly love it. Thank you for another great video. Give the ladies my love. God Bless

Tug, I love eating mullet and red roe is the best, don't eat to much roe or you will be in the bathroom sitting down. Mullet is a good cheap fish. Syrup is good on roe. I would love to come to saint Augustine and go fishing with you.

My wife & i just returned to Brisbane from a 6 week holiday for my daughters wedding in Eden New South Wales where they re-opened the Sapphire Smokehouse 2551 & I was blessed to sample much of the food they sell & I am now converted to smoking all kinds of meat & fish. Her & her new husband are just loaded with ideas for Dips, Fish Meats & now even doing smoked chilli chocolate that is selling like hot cakes.

Grew up on west coast of Fla, poor, eating mullet couple times a week kept us going, cousins always smoked them, my Mom always fried them and always served with a big pot of grits! Keep up the good work!

I grew up on the lost coast eating mullet almost every weekend. fillets, backbones, yellow roe, and GIZZARDS! You cant forget the gizzards.

Pack that row with salt for a week then fry it, you can brine it to your taste to .I'm glad you did this, because rowmullet was a large staple food back in the day,especially smoked with grits a grape jelly.

9:53 the roe are very good fried. they usually sell the roes separated or charge a higher price for the mullet with the roe. because are very good fried.

Great video and family fun. A few suggestions: bleed the mullet as soon as you dump them out of the net; immediately after bleeding, get them in a saltwater slurry (mullet are very oily and will heat up quickly); avoid eating blood meat by cutting it out or scraping off after cooking. Mullet is my favorite for smoked fish dip.

I was raised on fried and smoked mullet and grits, yummy. Also love the roe. We also ate gizzard and livers. Daddy called them chicken of the sea.

Hay Capt. You missed the mullet gizzard, we used to pull beach seines at Ponce Inlet for roe mullet, we would cut the head off butterfly the fish leaving the backbone in and smoke it that way about 500lbs at a time and sell it whole, we would take the roe and gizzard and fry them and have a dock party for all the guys on the boats, always a good time, love your videos brother.

For what we fix up here on the bay is great shade row with capers, onions and celery with eggs benedick and the rest of the fish we make fish cakes out of shade. For what you have done here today is the world that I grew up with. So keep them coming my young friend, for I love them all the way.

My daughter & her husband run a smokehouse down in Eden New South Wales.Some American tourists off a cruise ship told them the smoked brisket was as good or better than anything that they had eaten back home in the US.And the clam chowder was the best that they have ever eaten .Smoked chicken breast is delicious.

A lot of people from the coastal Carolinas cook their herring, shad, and mullet roe mixed in scrambled eggs pan fried in butter and eaten with grits! Just another way to try them! Big fan! 😊😊😊

Great show once again. As a kid I used to snag hook mullet from giant migrating schools. No one in my family ever thought of eating them but my grandfathers domestic help seemed happy when I brought these large black mullet. Maybe they were just humoring me. I like smoked mullet on occasion but not my favorite.

Mullets are best eaten straight out of the water.. RAW, FRESH!😋 And the roe, the same way!! Smoked? I guess I'll have to try when I can get it that way. I've had mullets raw, fried, boiled, but not smoked. From Polynesia to Texas, your videos are therapeutic.👍

amazing video i was raised on mullet and that backstrap is what the older folks would give us kids . mullet was a favorite bye my grandmother too. she loved the roe when i think of her i normally cook mullet in her memory with fried okra hot sauce n mustard

I definitely love smoked but not a fan of fried mullet. The roe is like cornbread when I smoked it. A friend of mine cans mullet and says it’s not fishy at all. Have some buddies who commercial fish them and I help out every now and then. It’s a sight to see all the guys castnetting in some of the worst conditions of the year when they run. I’ve had them swimming around the deck with all the water we were talking on.

My dad used to smoke mullet using an old refrigerator he converted to a smoker. Then he used peanut butter to baste them. Just smeared some peanut butter off them when they got a little brown. People ranted and raved over his mullet. He would sell them for $5 a fish sometimes.

I grew up eating Florida east coast mullet, I now live in the Florida big bend and the mullet just taste better here in the saltwater. November to December the roe mullet are running. I’m still not sold on the roe yet, but think I just haven’t cooked it right yet. Mullet fishing is my favorite fish to target.

I love to catch and eat smoked mullet myself. For those that don’t have a smoker, try scaling and gutting the mullet. Put them on the grill with the dorsal fin between the grates so they are belly up. Add some seasoning, liquid smoke and garlic butter to the belly cavity. Slow cook @ 200 degrees until the meat is flaky. Tastes almost as good as smoking them. What’s left over I make chip dip out of.

I grew up in Jacksonville and we used to go on the weekends to Big Talbot Island on the jetty's back in the 1970s and we would take a big long net about 50 ft long and we would make a round and pull them to the edge of the bank we'd fill up about 5 48 quart coolers in less than 30 minutes when they were running in schools. We did that every year for the family reunion and had big smoke smoked mullet and fried mullet we would eat the gizzards also fried yes, mullet has a gizzard like a chicken. Great times and good memories.

sooo,, ok! I lived in Florida for 17 years, and never tried mullet. Then 10 years ago we moved to the southeast coast of NC and I hear anglers talking about eating it. So of course I had to try it! Now the gentleman that was telling me about fixing it says he does it on the half shell, on the grill. He said throw it scale side down and let it cook until you don't see any more oil dripping out of it. No more oil, it's ready to eat. Well, I can't use a grill at our rental property, so I filleted it off the skin and bones and deep fried it. I tried frying it the same as any other fish for the first piece, and didn't really care for it,, a little too strong tasting to me. So I fried the next piece longer,, till it was a deep golden brown. That piece was delicious! At least I thought so,, my wife still didn't care for it. Now I see your version of it with smoking it,,, and I can't wait till next fall when the big roe mullet come through! And I'm for sure doing the dip with it! But question: what wood did you use for the smoke? By the way,, first time seeing you and I'm subscribed! Looking forward to more videos/recipes! Maybe I'll share my false albacore dip recipe with you!

I’m from St Croix VI, grew up on the east end of the island. Mullet was a main stay so was the roe. Also the rod of other fish. Ocean Gar and the roe is also very good 👍🏽

I live in Mobile,Al and we eat mullet every you just prepared it. My tip would be to bleed them immediately when you catch them and when you filet them leave a little meat on the skin . In other words don’t rub your knife on against the skin like you normally do when filleting a fish. That leaves that dark meat attached to the skin and makes it taste less fishy. I love the roe, but I have noticed the taste is not consistent from fish to fish. I think the flavor depends on how long the mullet has been carrying the eggs. Anyway, great video !

The first smoked fish I ever tasted was at bait shop that I used to supply with blood worms & he was selling these very small smokers & he was smoking mullet for customers to taste test , Hot straight off the smoker it was delicious . But in Australia we either deep fry our fish either skin on skin off in Batter or Breadcrumbs , served with salt & pepper Tartare sauce & a couple wedges of Lemon.

I've tried some yellow perch roe fried. It was ok. Your description was about what I experienced. Not something I would go out of my way to eat. Shout out from the frozen tundra of Wisconsin!

Yellow roe for me love fried mullet. I grew up fishing Keaton Beach area and eating mullet and swamp cabbage.

Grew up eating fried roe, and the white roe. Fried mullet, grits and gravy was every other week seems like, and we smoked them all the time. I still to this day fry all my speck roe or any roe for that matter. Also you can look up Batarga it is dried mullet roe from Italy and is used in pasta dishes, very expensive btw. Keep up the good work and stay safe brother.

There is an old seafood restaurant near Gulf😊 Shores which is known for frying mullet. It was really good. Can’t recall name.

My family were some of the first that settled Cortez in Bradenton as commercial mullet fisherman. My dad always fried the mullet with potato pancakes and tomato gravy.

I got pictures of my Daddy in his boxers wading way out in the bay with his cast net that he made back in the 50'sand 60's. We always had fried mullet!!! Flounder and redfish!!! We always had lots of fish Fry's on the beach!!!

The mullet you caught might be too big to "butterfly." That seems to be popular in "The Forgotten Coast" and "Big Bend " areas of Fla. When butterflied, the back bone is included in one of the filet sides. Pretty darn good fried.

Never had mullet roe but loved freshwater fish roe. Just had to be careful frying and slit sac to prevent exploding open in frying. I imagine the fish dip was good.

Great vid brings back memories from growing up in SW Ga and eating fried mullet. I'm not big on the row kinda mealy and dry but them back bones are the BOMB. I don't like a strong fish tasting fish so smoking the sides for dip frying the back bones and tossing the row is my way to do mullet. There is another fish we always eat but it's freshwater fish called a redhorse sucker if you ever get the chance DONT pass it up.

Awesome video. love Mullet! Fried (w/skin) and the backbone. And….smoked mullet in any way is the bomb! * Not a fan of mullet roe! LOL. Mullet has a long history in the Big Bend area of Florida (Steinhatchee, Keaton Beach, St Marks, Panacea). Every restaurant serves it up.

epic tutorial on mullet... loved it amazing job 2 both of you, i live in northern Michigan and never seen mullet but we grew up on smoke Chubbs & sucker fish which i wonder if there similar to mullet. i used to eat those all the time loved smoked Chubbs , god bless take care see you next time

Hey Tug, Grew up in the Big Bend, eating fried mullet. You ate the backbone cause you couldn't afford to waste it, but skin-on filets are my favorite. Not a big fan of roe, but they are a delicacy to some. Just be careful eating too much roe, due to the richness, as it will mess up your stomach... Love the show!!!

In the 60s and 70s, we would pull a 300-foot net at Micklers. We get 150lbs a pull. Normally, about 4 families were part of it. Mom would fry some on the beach for us. Then we spent the weekend smoking the rest.
