What you did with the parchment paper and fitting the pastry crust into the pan is something I've never seen before. Genius! Your command of English is enviable. That said, not to be snippy, but what you made here is a savory tart. A tort is, classically, a layered cake and a quiche, as your helpful camera man pointed out, has a custard filling. I love your videos. I have never made anything but a pancake with buckwheat, and it was milled into flour. How exotic to use the intact grain! Thanks for the mushroom picking field trip/tutorial. Your forest is beautiful.

In central IL our big mushroom are Morrells. Cut them in half long way, bread them in milk and cracker crumbs, then fry them in butter.

I really like you! You and your husband seem like so much fun! I wish you lived next door so we could go mushroom picking together in PA. My Polish uncle used to take us kids (family of 5 children in 5 1/2 years) off of our parents hands regularly. I remember many trips to the woods near the cemeteries where we children would be picking "huckleberries" and he would be searching for mushrooms. As you can imagine, we kids would be immensely involved in finding (and eating - FIRST!) as many huckleberries as we could (avoiding the rattlesnakes, of course). So I never learned the fine art/sport of mushroom picking. Then we would go back to his place to color and watch cartoons (and eat his yummy kid snacks - he had a special bin just for us!) while he made the bestest mushroom saute'! Oh, I can smell it now! I never learned how to make it, but it was wonderful! He passed 21 years ago, so I thought it was lost to me, but my baby brother somehow picked up the recipe and shared it with me last year! The secret was Yuengling Porter beer! Sautéed with butter, of course, and onions, salt, pepper, onion powder, and garlic powder, these things are heavenly! Now, if only I knew how to pick woodland mushrooms, like you! Thank you so, so much for sharing today! Maybe some day I can visit my ancestral country, too! Blessings to you and yours! :)

I’m from NePa and my Baba taught me how to forage for mushrooms! It is such an important heritage/tradition to hold on to! Love this video!

As a child, I went with Babcia, mushroom picking here in Canada. My grandson-in-law just got a new smoker. Hm, my mind is already working. Thanks for this great meal idea.

Just took mine out of the oven. I used smoked Gouda and it smells great! I had way more than I needed for the crust so I put the rest in a loaf pan and baked it.Yum! I would post a pic but I’m not seeing where to put it.

So timely! I was at dinner with at my sister’s yesterday and she had purchased some dry mushrooms from Poland so we got into a discussion about mushroom picking. My father would go with his family to pick and I remember him also going with my maternal dziadzi. We would eat them on meatless Fridays with onions and sour cream and mashed potatoes!

I have been able to find Farmers Cheese at Wegmans here in the DC area. Growing up, my Baba made her farmers cheese. I think I need to find a way to smoke some cheese 🤔

My grandmother tells mushroom 🍄 picking stories. One story includes a huge rat snake that scared the life out of her. I think she tried to sit on him(not a log)😐🤣

Some people got confused with the word TARTA. Anna said at the start of the video that she's making a quiche, not a tort. "Tarta" is not a tort in Polish; it can be savoury (like this one with mushrooms) or sweet with fruit, cream or custard. Polish TORT is a torte in English. Google explains here: "a tart can be savoury or sweeter whereas a quiche can only be savoury. A quiche consists of a pastry shell filled with a savoury custard made with eggs, cream, seasoning and a whole array of other ingredients such as onions, mushrooms, ham, shellfish or herbs."

Would soaked, boiled, dried wild mushrooms be ok for this? I don't want rubbery, so I'm thinking half and half with creminis, and chopping the dried reconstituted mushrooms fine and chopping the fresh creminis more roughly...

You're right . In Poland, the one who sells mushrooms at the market must undergo training in knowledge of mushrooms and only then is granted permission to trade mushrooms. I pick mushrooms but only for myself. I never take home mushrooms that I am not sure are edible and safe. Every year there are many cases of mushroom poisoning, which result in liver transplantation and even death.
