I know people use these terms interchangeably in English but bilberry is really like zillion times tastier than blueberry (pensasmustikka) and when we say mustikka in Finland, we really do mean bilberry.

@Lumi Isokääntä Ei kukaan saa - mutta suomalaisuus etenee Davessä :) Englanniks se jo osaakin. Eikä sais englannikskaan kiroilla tietty. Mut ei me saatas tehä muutakaan pahaa - että kyllä me tarvitaan Taivaan Isän apua: saada anteeks kaikki paha mitä ne tehään. Eihän me saatas ees ajatella pahaa. Ja siitä ei selviä kukaan päivääkään läpi puhtain paperein. Että ei pelkkä kiroilun lopettaminen riitä. Vaikka onkin hyvä periaate. Mutta armollisuus on vielä isompi periaate - kun kukaan meistä ei elä puhtaasti päivääkään.

In Finland cooking is actually part of compulsory school subject (at least used to be at grade 7). So all Finnish adults should know how to cook to some degree.

Tip for future: especially when making these kind of pies, you can give your frozen berries a slight dust of potato starch (I usually use a tablespoon). It somehow makes them less liquid-y, so your pie doesn't get soggy!

Potato starch, well any starch actually, is used to bind liquid. The starch will thicken the water in the blueberries so it's not as runny.

Btw, what a genius way of learning finnish. You really have to think about the meaning of words when reading the recipe and also be very precise about pronouncing correctly so that translator works without errors. You also learn new words and meanings and get more comfortable with the language altogether. Aaaand you bake the stuff every finn has baked at home or in domestic science class in school, which brings you closer to finnish culture.

I used to live in the UK and I think you can tell when you walk into a supermarket there that the ingredients they sell are not sold in amounts aimed at home bakers. Finnish supermarkets tend to have those basic baking ingredients in larger packaging sizes than UK supermarkets. And I had trouble finding things like hulled cardamom in London - I used to bring both cardamom (hulled) and cinnamon (more flavourful in Finland) with me back to the UK when I visited Finland! :D I ain't gonna spend time hulling cardamom pods, man! :D Love this series, by the way - will finish watching the vid now! ^_^

I don't know if you have anything like that in the UK, but in Finland schools have special classrooms with multiple little kitchens in them, and we get taught "kotitalous" (domestic science) which includes basic cooking and baking skills, as well as general housekeeping.

You did so well! I love baking and I'm very good at it, so my initial thought is always "oh, it's not gonna be that hard to follow". But then I see sentences like "lisää keskenään sekoitetut kaurajauhot, leivinjauhe ja kardemumma" and realize that oh, it's probably not that easy after all 😅 Btw in case you haven't looked it up, "keskenään" means something like "among each other". It seems to come up in recipes so I figured it might be useful to know

You did really good job here! But always remember, when mixing butter and sugar together you're supposed to use electric mixer and mix them till it's actually looking like liguidy dough. You know it's good when you lift the mixer and you can draw an 8 on top of the mixture and it stays visible for good couple of seconds. That's what makes the dough more fluffy and soft 👌

"the crust isn't quite even all the way around" dave what are you TALKING about??? when my mom makes blueberry pie one edge might have like 1 cm of crust and the other side 5cm. that's a five outta five crust you made right there!

Personally, I switch the oat flour for oat bran. Makes the dough taste like an oatmeal cookie and makes it a bit more chewy. Which I prefer to smooth dough.

Or you could make cheesecake dough (digestive etc), rhubarb pie is really good made with bun dough

Hello!!! I did exactly the same recipe twice and now it seems that I found out the problem!!! I didn't defrost the blackberries what made the difference, because takes longer to cook everything. The second time I didn't defrost either but cooked for twice the time. It seems that it worked.

Okay, maybe basic pulla, is something that everyone can make, but oh my gosh karjalanpiirakat are pretty hard to make, especially, if you were to make the filling part from scratch, as you should. I don't think that many people can confidently say they would be able to make them, and not regret it.

Awesome! It also helps to put the crust in the fridge while mixing up the filling, it prevents it from melting and pooling at the bottom of the dish. Someone already said this too, but potato starch (or plain flour if you have nothing else) mixed in with things like blueberry, raspberry and cranberry negates some of that moisture and makes the final product a bit more sturdier. Frozen berries especially are quite wet once they thaw out in the oven and all the extra liquid can mess up your crust. (Basic sugar cookie dough crust is my favourite for any sort of sweet pie!)

In Finnish, that mustikka is a black berry (billberry/dark berry) and billberry is borrowed for Danish word bollebar, which means dark berry.

4/5, you did so well and your Finnish is really good already! I prefer to use wheat flour (?) and no cardamom and I also don't spread the dough to the sides, I just pour it in and pop the filling in and stick it in the oven because I'm so lazy haha... but that's just the recipe and personal preference I guess lol

Have you yet tried the Finnish traditional dish called Karjalanpaisti? It's a stew with beef and pork meat, carrots and onion - spiced with black peppers, salt and bay leaf. The key here is to let the stew simmer in the oven for many hours for the meat to become extremely tender. Only thing to do is occasionally adding more water. When the stew is ready, serve with taters. Simple is best!

The bottom part of the base was so thin because you didn't put baking powder in the dough☺️ Baking powder raises the base.

Don't worry about the crust being thicker than the base, it's at least partly because of the baking powder. The crust doesn't have anything on top to stop it rising so it'll rise more than the base will

The berries you used for this pie are actually called bilberries. :) It's the same berry family as blueberries, but blueberries grow in a bush, they're bigger and white inside. Bilberries are the "wild" cousin, they grow on a twig in a forest on a moss bed, and they leave the gorgeous purple stain, while blueberries don't. And obviously bilberries have a lot deeper and richer flavour than blueberries. Blueberry in Finnish is "pensasmustikka", whereas bilberry is "(metsä)mustikka", but we always say just "mustikka".

When I usually make my cheese meat ( kinkku ) pie, I put the crust in the oven for a while before I put the topping on and putting it back.

That's a solid 4/5! It looks good and I bet it tastes good too! I love cardamom myself but we don't typically add that to our blueberry pie so that is definitely an additional spice. The crust looks good and that type of pie is expected to be a bit soggy, but if you want to avoid that from happening, just put a little less blueberries on top. In my family we don't use an already measured amount, we add the sour cream filling first and then sprinkle the berries on top so that it's even but not drowned on berries. That's how we also avoid dyeing the entire filling purple! It'll then look pretty and like a creamy polka dot pie :)

Looks good. My mom spreads butter to the bottom of the pie pan before putting dough so that it doesn't stick. and after coming out of oven usually she want it to rest for while.

5:12 the recipe said to mix together the oat flour, baking powder and cardamom and then mix them in. Keskenään sekoitetut = the (ingredients) mixed together. I was expecting a disaster, but I guess this flaw didn't affect your pie much after all?? I think you did an amazing job!

You should have gone to nearest forest to pick those blueberries by youself. Even here, in Espoo, we have a lot of blueberries in really small forest plant next to us. Last week we made blueberry pies almost every day :)

Looks sooo delicious! Ah... have to wait for a little while longer for the raw blueberries to ripen in the woods 😊 Saw plenty of them a couple days ago! And when they are finally plump and ready to be eaten.. 😍 yum! It usually follows this pattern; I SHOULD pick the berries and place them in the bucket but instead they usually end up in my stomach, before my dog realizes what I'm doing and pushes me away from the bush and claims the bushes for herself... She has this habit of eating from every bush, making sure she touches as many berries as possible so that I won't pick them 🤦‍♀️ She loves her blueberries

Looks good to me... you need some vanilja kastike/vanilla sauce with it or vanilija jäätelö/vanilla ice cream works as well. Gonna give 3,5/5 I really dont know what went wrong with filling but I'm sure it tasted nice

4 out of 5! I'm sure it was delish, and really the only things which could've been better were the base to filling ratio and the sogginess. The first you already solved and the second one can be remedied in the following way: when the time has run out and the pie is done, do not take it out of the oven. Instead, cover the pie with a piece of baking paper or something like that, so the crust doesn't get dry and/or burned, turn the heat off and leave the pie to sit there for a bit. It will let the filling to bake all the way through properly. If I were to instruct you in Finnish, I'd say "peitä piirakka ja jätä se kypsymään jälkilämmöllä". Doesn't really matter that much, though, blueberry pies are a messy eat anyway.

It is supposed to be a little soft in the middle. As you might have noticed it gets firm when you put the pie in a fridge and eat the rest the next day. Naminami!

You should do a new pizza episode. Night and hangover pizza with traditional Finnish flavors. Dillinger and such. Also maybe a homemade pizza with Finnish ingredients.

Nice pie you created! Cardamom is ok spice in hearty meat dishes and I really don’t get it why they put it in sweet stuff in Finland. As yummy as cup cake with ketchup 🥴

Mustikka isn't blueberry it's bilberry. Pensasmustikka is blueberry. There are LOT of translations in Finland that gets this wrong.
