This one of the best biryani recipe in the world, it is Hyderbadi Biryani.
Ingredients
🍀750 gm Basmati Rice or Jeera Samba Rice
🍀1 kg Mutton or Chicken
🍀4 Tbsp Oil
🍀3 Tbsp Ghee
🍀4 large Onions sliced thinly, weight 400-500 gms
🍀¼ cup Coriander leaves finely chopped
🍀¼ cup Mint Leaves finely chopped
🍀Kewra Essence few drops
🍀Salt to taste
For Marination
🍁1 tbsp Chilli Powder
🍁3/4 tbsp Coriander Powder
🍁1 Tbsp Garam Masala
🍁1 tsp Jeera/Cumin Powder
🍁1/4 tsp turmeric powder
🍁1 tsp pepper powder
🍁Salt to taste
🍁1 cup Thick Curd
🍁1 tbsp Lemon Juice
🍁½ cup Coriander leaves chopped finely
🍁½ cup Mint Leaves chopped finely
🍁Green Chillies
🍁100 gms Ginger Garlic Paste
Whole Spices (x2)
🍀4 Cloves
🍀4 Cardamom
🍀2 Bay Leaf
🍀2" Cinnamon
🍀2 tsp Cumin Seeds
🍀2 Star Anise
🍀1/4 tsp Fennel Seeds
Method
🍁Start by marinating the meat with all the ingredients given above under marination and the whole spices.
🍁Let it marinate for 2 hours but overnight is great.
🍁Fry onions till golden, drain and set aside.
🍁Add remaining oil to the marinated meat and mix well.
🍀Wash and soak rice for 15 minutes (jeera Samba) or 30-45 minutes (basmati rice).
🍀Bring 12 cups of water to boil.
🍀Add the whole spices, salt, 1 tbsp coriander, 1 tbsp mint, 1-2 green chillies, some lemon juice, and ghee.
🍀Then add the soaked rice.
🍀Cook it for 5 to 7 mins, till it is 50 percent done.
🍀Once done, drain it and set aside.
🍁Add marinated meat to a thick bottom pan.
🍁Top it with the half cooked rice.
🍁Sprinkle some fried onions, coriander, mint, turmeric and Chilli powder.
🍁Seal the vessel well to get the dum effect.
🍁Place it on a direct flame for 5 mins.
🍁Then keep an old tawa on the stove, and then place the biryani pot (to facilitate dum cooking).
🍁Let it cook on high flame for 5 mins then simmer it (40 mintues for mutton and 30 minutes for chicken).
🍁Leave it for 10 minutes and then break the dum.
🍁Serve hot.
🍁This biryani can be eaten without any accompaniment as it is very flavorful, spicy and yummy.
