Harvests are coming in like CRAZY right now. Plus, our freezers are both full. So, today was an all day canning extravaganza for me. At the end of the day (video) I had canned 18 jars of pickles, 5 jars of blueberry pie filling and 54 jars of strawberry jam. Recipes I used for each of these, was taken from the 2019 Ball Canning Guide. If you're new to canning, and you're nervous, don't be. It's really not all that hard. If you have questions, leave them in the comments below, and we'll do our best to help you!

I dice my over ripe cucumbers and pickle them in a dill brine. Can in 1/2 pint jars and use them in recipes that I need chopped pickles. Like potato salad, etc. A real time saver.

I have to say you started my canning journey and I have been canning everything since I found your channel. We are so happy that we can save our produce because in previous years we wasted some.

Actually as u said " it's nuking whatever is bad in there"...I agree, but then pause and think about what it is doing to our food.., when we use it to heat things up😳🤔 I finally got rid of my microwave and installed a fabulous much needed fan above my stove...LOVE IT! Just food for thought is all.

I recently learned you can make cucumber chips. Slice the cucumbers with your food processor or a mandolin super thin. You can dehydrate them in a dehydrator or bake them at 175 F for 3-4 hrs.

my oversized cukes I chunk and freeze for winter months for cucumber/lemon water....taste refreshing when nothing is available here in upstate NY

I thinly sliced some of my cucumbers. I got lots of cucumbers. I used my electric mandolin. And I put them in my dehydrator and lightly salted them. They are good like chips. I also am going to put them on our salads. I have also been drying my lettuces. I have so much lettuce! Then I grind it up in my food processor. It ends up like parsley. Going to add it to my sauces and soups. Keep your canning on.

Woohoo! You go girl, you’re a canning machine! I love to watch other people can, I’m weird like that. I’ve never had my pickles turn out crisp enough for me. I’ve heard that you have to can them within 24 hours of picking, maybe that’s been my problem. Or maybe I’m just too picky about how crisp they are. Today I am dehydrating a lot of peaches someone gave me. Onward and upward, canning compatriots. Lets can all the things!

A tip someone gave me about strawberry jam, add 2 tablespoon of butter to prevent foaming after boiling. It works! All of your canned goods look delish!

This recipe is a TRUE LABOR OF LOVE! It takes a very long time (about a week start to finish)! They say it’s worth it though! How about “Candied Cinnamon Pickles” I’ve seen this on Pinterest and I LOVE cinnamon and I’ve been wanting to try this. However, my hubby and I are PCS’ing (army base move) to Florida so I’m not canning anything this season as I can’t move it! Here’s the recipe: CRISPING SOLUTION: 2 gallons overgrown cucumbers (8-10 large ones) 1 cup pickling LIME (Not salt) 1 tsp Alum 2 cups Vinegar (this is an old recipe and some have concerns about mixing vinegar and lime however they’ve NEVER had and issues, you CAN substitute water) CANDY SYRUP: 2 cups vinegar 2 cups water 10 cups sugar 16oz red hots (between 14-20oz is fine) 8 sticks of cinnamon Red food coloring (personal choice you can add it to make a deep red color or not) 5 gallon food grade bucket Day 1 Peel, cut in half, remove seed, and then slice in 1/2 inch slices Put them in your 5 gallon bucket. Add your crisping solution Add water to completely cover your cucumbers Put your lid on your bucket and let it sit for 24hrs DAY 2 Drain and rinse the pickles thoroughly! Make sure all of the lime mixture is removed Clean your bucket thoroughly as well. Put pickets back into your clean bucket and cover them with cold water and let them sit for 2hrs. REPEAT THIS PROCESS 3 times. This ensures ALL the lime mixture is removed from your pockets. This is a grand total of 3 rinses and 6hrs of soaking Remove your pickles rinse again and put them in a stockpot. Cover them with water, bring it to a boil and simmer them for 2hrs. Make sure they are ALWAYS covered in water. Add water as needed during this 2 hrs. Drain and rinse them and put them back in your bucket. Prepare your candy syrup. Boil syrup until all candies are melted in. Add food coloring to your desired red color. Pour the boiling syrup over your pickles. Close your bucket and let it sit for 24hrs. The syrup will settle. Strain your syrup recoil it add back to pickles. Let sit for ANOTHER 24 hrs. Repeat this process 3 times. CANNING YOUR CANDY: Prepare 8 pint jars Bring your syrup and pickles to a boil Fill your jars with the pickles first then top them with your syrup. Leave 1/2 inch head space Process them for 15 minutes in your water bath canner To serve them. Drain your syrup and put them in a dish, or eat them from the jar I hope if you do this that it’s delicious!.

Those pickles you can freeze dry those add a little bit of your favorite spices and you got pickle chips

You could make some sandwich stacker pickles with the larger cucumbers? You could make some cucumber water to keep in your fridge if you like ....that I love it! It’s so refreshing! Cucumber tea sandwiches are very good

I buy my sugar in 25lb bags. You can buy it in a regular grocery store or Costco. This is easier than going to the store frequently. As long as the bags stay dry the sugar will last forever.

Yeah we just don't have a bulk store near us, but when we get a chance to get back to Costco we will stock back up

Wonderful video as usual. Make it easier on yourself, purchase a Cuisinart, it shreds the Zucchini, Cabbage, Onions, Carrots, and Potatoes for hashbrowns in seconds, and cleans up in a snap. The slicing blade is perfect for slicing pickles. We use ours to process everything including excess Tomatoes, skin and all, freeze in bags or freezer canning jars. If you don't have crank Apple peeler, Walmart has them, peels, slices, and cores makes pies a snap. If interested contact me for a quick tip on making an Apple Pie in less than 3 minutes, super easy, no sugar, oven to table in less than 30 minutes. Oh yes agreed about the Cuisinart. You can even get one at a thrift store if you are in them often enough you’ll find one. Mine lasted 35 years and I did something really stupid and wrecked it. I immediately bought a used one and I use it so much now it stays on my counter. The different blades are such a blessing. Machines made in Japan from the 80’s are so well made and parts are readily available on eBay and sites that specialize in replacement parts for older machines. Some newer models are also bigger if thats a need. 😉

I wash my jars in the dishwasher with a high heat dry setting. I can fit a lot of jars in the dishwasher at one time.

Wow you go girl!!! Im canning 70 lbs of Tomatoes in 107 degree weather. Its pretty miserable but think of all that yumminess in the winter! Do you have a good strawberry recipe thats not jam? I picked up a flat of them yesterday. I have enough jam to last 5 years. My mom got me that spiralizer. I havent used it yet but its at the top of my list. Have fun and try to stay cool. 💖🙏🏻

I am a total newbie at canning, freezing, dehydrating....ALL things "preserving". I would love to know what I NEED to get started. As in, how many jars, lids, rings. Also, do I NEED "regular mouth" or can I use "wide mouth" for everything? We have a 100' x 100' garden split into 9 - 30' x 30' subplots with 5' walkways in between. We also have 3 fig trees, 2 peach trees, 2 raspberry & 2 blackberry vines + 9 pecan trees. This is our 1st year gardening & preserving.

That a massive garden space to start out with! You will need all the canning jars you can get your hands on and when you think you have enough double it 😆. I have about 50/50 wide mouth and regular mouth, but they all do the same purpose. You'll need a water-bath canner, pressure canner, several canning funnels, canning tongs to grab out hot jars. We dehydrate very little, I wouldn't make that top priority because you can use your oven in a low setting. Freezing is just start with ziplock freezer bags gallon and quart sized and if you find you need to keep things longer then invest in vaccum sealer.

Hey friends! I just came across this video and was thinking “Thank God, my freezer is FULL of berries and I need ideas!” Quick question. When you used the Pomona Pectin, did you follow the recipe in their box or the ball book recipe? I have an older version of the ball book, but the amount of sugar is crazy! I purchased some Pomona to try it, but haven’t decided which way to go yet. Thoughts are appreciated. Amazing day of preservation!
