Mr. Mizukami trained under the famous Sukiyabashi Jiro before setting up his own restaurant.

炙ると焦げるが違うこと、みずかみさんで北寄貝をいただくと良く理解できる。とても素晴らしい、美味しいです。

いつも楽しく見させてもらってます。 揚げ足取りに受け取って欲しくないのですが、以前勤めていたお店から次郎さんで修行し直すって言葉、非常に失礼な言葉だと思います。 自分は水上さんの生い立ちをもちろん知るはずもないし、どのような修行をされてきたかも知らないですが、仮に無駄な事があったとしてもその全てが今現在の自分自身だと思うのです。 町寿しには町寿しの良さが高級店には高級店の良さがそれぞれある事は私なんかが言わずとも、もちろん御承知の上で、ただただ言葉のあやだったかもしれませんが、以前のお店に、水上さんの過去に対して本当に失礼な言い方です。 食を、又、食を造る人を愛しておられる山本益博さんらしからぬ発言でしたので思わずコメントしてしまいました。

鮨はまず酢飯ありきだと思います 鮨ネタばかりを重視して酢飯が美味しくないお店が実に多い 銀座の一流と呼ばれる店でさえ ネタが大きく酢飯が小さくてバランスが悪い この「鮨みずかみ」さんには是非訪れてみたい
