Happy Lunar New Year! 🧧 Celebrating with one of my favorite side dishes, ASIAN SMASHED CUCUMBER SALAD 🥒. It’s light, refreshing and simple to make. Takes any aggression out too when smashing the cucumbers lol. The handful of fresh cilantro adds a great depth of flavor. 🤌🏼 It’s gluten-free and keto, but if you only have sugar as the sweetener, go for it! The sweetener/sugar helps balance out the saltiness.

6 seedless Persian cucumbers 2 tsp allulose sweetener (or sugar) 2 tsp sesame oil3 tsp gluten-free soy sauce (or regular soy sauce)
1-2 tsp rice vinegar
3 tsp black vinegar (or rice vinegar) 3-4 garlic cloves, finely chopped1-2 tsp chili oil (optional) Toasted sesame seeds for garnisha small handful of roughly chopped cilantro
Wash cucumbers and pat dry with a clean towel. Using a wide knife or butcher knife, point the sharp end away from you and smash the cucumber until it cracks open. Then cut into bit size pieces or four to give sections of the cucumber. Cutting straight or diagonal works. In a mixing bowl, mix allulose sweetener (or sugar), sesame oil, gf soy sauce, chili oil (optional), and rice vinegar. Add cucumbers to the sauce, garlic, sesame seeds and fresh cilantro. Serve cold.
