There's obviously going to be exceptions. Can't always apply one principle to every exercise.

Ok, what's fundamentally different about this? Log presses have to be locked out.

@@rlanderson3 logs are logs. Coach isn't using a log. Also, it's his experience. Maybe not locking out works better for him?

A lot of strongman say the football bar OHP is the best for mimicking a log Press if you don’t have one. Makes sense since it’s cumbersome and out in front of you more as well as having the neutral grip handles.

I started using the football bar for my presses and I’m stuck using 35 plates

Black Widow makes a football bar with a nice opening in the middle reducing the forward bar path. I’ve been using this bar for quite a while now with great gains.

I have a tweaked r shoulder and have been thinking about using a football bar for OHP, based mostly on the neutral grip capability

I've used the Smith machine for overhead press while sitting on a flat bench with no back pad, it let's your body free float while pressing.

Imo just use progression, as you would with a barbell. It also is dependent on how much space you have either outdoors or in a gym. I usually build volume for 3 weeks then do a max effort (max weight) push for whatever length "runway" you have. Simple stuff rooted in consistency and progression.
