Kakuja has stages: half-kakuja and full-fledged kakuja. It all depends on how often the ghoul engages in cannibalism (eats other ghouls). Half-kakuja manifests itself in the form of a change in the usual eve , and the full-fledged kakuja manifests itself in the form of armor and additional abilities

It's never adaquately explained in the anime, but a Kakuja is a Kagune that is wearable and functions like armour, while also giving them a general power boost. A normal Kakuja will cover most of the Ghoul's body and they have full control over themselves when they use it. A Half Kakuja will only partially cover the Ghoul's body and they will not be in control when using it, becoming feral. Basically which one you are just depends on how much experience and control you have over it.

Here is whole Kagune stages 1 stage: Normal kagune (it can be tentacles,wings,blades and others) 2 stage: Half/Incomplete kakuja which is achieved trough cannibalism,becuase of RC level in ghouls and humans are different. More ghouls you eat,more you evolve as one and more crazier you become (on this stage,Ghouls Kagune gets berserk type of upgrade,most of time it's visualized as a liquid mass growing around kagune and shaping it in to different shape or growing it larger,in this state Ghoul minds goes crazy) 3 stage: Full Kakuja (This is complete stage of kakuja on which ghoul is basically able to become like a beast,it can be visualized as a huge humanoid monster covered in liquid Kagune mass in shape of armor,or for example huge monster resembling some kind of animals. Also a lot of full kakujas have special properties/abilities) fun fact,that armor on investigator is Aratas and toukas father's full Kakuja form,they just made it in to armor and not a weapon,cuz when that ghoul was alive,his Kakuja was like a armor covering his whole body What are RC cells? Rc cells are like your ordinary red blood cells. They are in everyone's body,Ghouls or humans or animals. Major difference is that Ghouls body produces tons of RC cells compared to humans,in fact,humans body has so low RC cells amount that ghouls need eat them regularly, while if ghoul eat another ghoul he will be satisfied for far longer but cuz of cannibalism making ghouls go crazy,they can't stop only on one time a month to eat. As of how it was mentioned in last video,ghouls also have extra organ which is named Kakuho sack. Cuz ghouls have thousands times more RC cells,their body naturally evolved to have a place in body to store all that cells.this sacks are placed on your back side I your body near all organs. Kakuho sacks are place where Kagunes are forming from by splashing big amount of RC cells our and giving them form of a kagune (tail,wings,blade etc). That's why CCG guy was confused and questioning how many Kakuho sacks does Kaneki have ,since normaly in different type of ghouls kagunes there are from 1 to 4 kakuhe sacks (one for EACH tail,wing,blade) but with that 2 centipede tails can showed up to 6 Kakuho sacks!!! Kakuja does not mean canibalism. It's an evolvement of the ghoul part. Since he is half ghoul, and half human, he's transforming into half kakuja half human. The human part doesn't disappear just becuase the ghoul part changes.
