Try the Nesco spices, they are really good and make it much easier. You can find ingredients on their website if you are concerned about it. Simply add 1 pack of cure and one pack of spice to amount of meat specified on package, mix and squirt onto dehydrator. The wide tip on plastic gun works better and dehydrates just as good as narrower strips and takes less time than the metal guns narrow tip. As for meat that works around plunger, just leave plunger extended and unscrew handle end and slide plunger out dragging meat off walls of gun. Reload that meat when u refill gun. At end add it to the meat stuck in tip and hand shape that and put on dehydrator. You can mix the spices to get different flavors. My favorite is 1 pack original to 2 packs Hot&Spicy. Want it hotter make it 50/50. The Original makes a good jerky and you can add things like chipotle pepper, teriyaki sauce, cayenne pepper, garlic, ect to it to make other flavors. If dried properly it will last 3-4 weeks in zip-lock bag at room temp. **TIP--lay strips onto towel in line and roll so both sides are in contact with towel, lay next line and roll. Continue until all jerky is rolled into towel while still hot from dehydrator. Allow to cool while rolled up in towel for several hours or over night. This dries oils off jerky and it will last longer

I tried one of the jerky guns years ago and although it was easy to use I found the cure to be much saltier than I enjoyed eating. I'll stick to taking a roast or other lean cut of beef and dehydrating it. The level of tenderness depends on how you slice the meat as some people like a chewier jerky and some like a tender jerky. At any rate you have to taste it to decide for yourself and if you like a lot of salt then these kits are for you. I like to marinate jerky meat in worchester sauce, liquid smoke, salt, pepper, cayenne, onion and garlic powder. No sugar. It's not needed.

@@randomwicked9806 I like his ingredients. Like he said, you can experiment. Unless the salt is necessary for curing, maybe one can leave it out for health reasons? I wound up buying the LEM Jerky Cannon. Family owned company, so not dealing with China. Haven't used it yet.

You control the salt, UNLESS you let someone else make the seasoning for you.

@@kellyvcraig No, the salt is necessary when using ground meat. It's not needed beyond taste when you use a whole cut of meat because the inside meat hasn't been exposed to bacteria.

Except that if you look at its reviews, there is a lot of trouble and breakage with this model. Chances are you got a good one. Chances are, I wouldn't.

Put dehydrator trays on a lazy Susan. The pressure of meat coming out will spin the tray.

Yup! I've done it before, BUT be careful when you defrost them because condensation will settle on them. I would recommend defrosting them out in open air so that they dry off quickly.. you might want to pop them in the oven on minimum just to dry them out. Hope this helps!

Salt will greatly extend the shelf life. Besides taste that's it's main purpose. So it's your call but, if not eaten asap then I'd use the salt.

THE salt they are talking about, for curing, is not really salt. Rather, it is sodium nitrate, which is, often, referred to as "pink salt." You CANNOT use it as a salt replacement, since it is toxic in quantities. Pure salt can be used for curing too, though the approach is different. It's a damn site healthier for you than nitrates.

Great video but a tip jerky does not have to be refrigerated. You didn't tell your audience. Can put in a baggie and will keep for months. Thanks for the video

NO, IT DOESN'T. First, it should be made clear so called "pink salt" should not be confused with table salt, whether sea salt or other. It is sodium nitrate and is too toxic to be used to replace table salt. To qualify that statement, you do not need to add toxic nitrates to everything you want to store, and, certainly, not things that will be used in short order. You can add storage life by refrigerating. You can add more storage life by freezing. Solid meets can be cured with pure sea salt. Meats treated with sea salt (no iodine, anti-clumping agents, etc.) dehydrate because of the salt. After treatment with salt, the salt is washed off and the meat is allowed to dry again. If the meat becomes too hard, it can be grated onto other foods for flavoring.

I think all beef jerky is technically "raw". I've been eating it for years and it's been ok. I think the salt and dehydration process will kill most bugs.

This isn't raw, it's cooked. He set the dehydrator at 160 and the oven at 170. That's hot enough to cook beef. The dehydrator should be set at 100 degrees and run longer to make dried jerky that is not cooked.

this is the nasty kind of jerky though, the cheap shit that taste like 4 day old dehydrated mcdonalds hamburger meat. wouldnt even feed that shit to my dogs. Beef Jerky is a luxury, if you want good beef jerky be prepared to spend the money, if you really love that shit then the money shouldn't be a problem but youre better off with no jerky over cheap jerky.
