Farmed Atlantic Salmon. I used to work at a fish farm. Its even better if you get it caught wild and do this yourself. Imagine fresh caught Spring or coho salmon. They farm atlantic salmon because out of all the other species of salmon, atlantics grow the fastest. It already cost an arm and a leg to raise any fish, but atlantic salmon are cost efficient.

This is brined in salt water, dried and cut. It's called lox. No smoke.

@@priesty4783 I smoke my own salmon here in alaska I use sockeye (firmer flesh) I put enough salt in water to float a potato then place the fillets in the brine for about 20 minutes then I place the fillets on a sheet pan and place them in the fridge for 12-24 hours then I place them in the smoker for about 3-5 hours (depending on how much smoke you want) I use alder because it brings no flavor but smoke to the fish cut into pieces vaccum seal and it can keep in the fridge for about a month unopened a week once you open the package or drop into freezer for a year or so ...but that is just oe way another is to follow the above then before it hits the smoker brush honey on it and roll it in brown sugar it is called squaw candy if you try this let me know how it turned out and how you like it

You appear to have missed the giant room that they put the salmon in to be smoked. They are not willing to divulge the process that they use, obviously. I'm not sure where the uncertainty comes from. The salmon are smoked, obviously, and people enjoy them. No mystery.
