Love her food philosophy - "I want to eat and drink what I like, when I like." I adopted this years ago, one of my best decisions. What's pathetic is those who complain that eating nearly anything is cause for guilt or akin to committing a felony. There are people in your city, and in the world, who would be grateful to have the abundance of fresh food and potables that many of us take for granted.

Your voice is ambrosia; and cooking as elegant as your diction. I could listen to a monologue of the growth of carpet fibers were you the narrator. (I might just become a good cook yet). Oft I find myself looking for soup and shellfish recipes, here we have them joined, and this certainly sounds appetizing.

My Thai friend made this for me once but in her way. She used coconut milk, no coriander and added lime in the end. She also added enoki mushrooms and squid. It was so friggen good

True. They are toxic over there. Nigella was never about high-class food. She is about kitchen economics and making difficult recipes easier which many people do not understand.

Looks like many chefs have caught up with her by using better than bullion in many of their basic dishes (not talking about restaurants, that’s an entire different animal just by quantity).

Having battled lemongrass in soups as fibrously inedible, it will behoove you to wrap it in cheesecloth, same with the Kaffir lime leaves. Still imparts the flavor. Galangal is also part of the "Thai Trinity" of flavors. I love this soup. It can be done with chicken, too.

This is KL Malaysia, Nigella, I don't know you like Durian or not but I would love to see how Durian porridge is made. It is Durian paste +coconut milk +baked green beans +brown sugar and pandan leaves for added fragrance. Mmmm lovely, I have not been to paradise. BYE !

Only wonder how it works with the lemongrass and spring onions being cut identically and being left in the soup though only the spring onions are edible

I was just about to say the same thing. Maybe put the lemongrass in cheesecloth, therefore giving off its flavor without having to fish it out of each bite of soup?

I wouldnt slice the lemongrass. Just grab a stalk, bash the bulb end hard a few times with the handle of a kitchen knife until it splits and flattens. Then tie a knot in it (if soft enough) snd throw in the soup. Take it out when cooked.

You're missing galangal root I also let the aromatics steep a little longer and strain them as they are inedible before I add mushrooms and shrimp. I also love it with chunks of tomato

My only gripe about this dish is that button mushrooms are pretty terrible for soup. I know she did it for accessibility but these days oyster mushrooms or shittake mushroom should be everywhere in the super market - much better alternative.

Straw mushrooms are what they use in Thailand if any mushrooms are added and they are much closer to button mushrooms than they are to any flat or long mushrooms. If you've ever had straw mushrooms, you'd know that oyster or shitake mushrooms aren't a good substitute. If you don't like button mushrooms just leave them out.

@@vivida7160 Straw mushrooms is indeed the proper way to do it, but i've seen recipe using Oyster or shittake as substitute since straw mushrooms are pretty rare (only ever found them in a good Asian grocer). You want that silky mouth feel and a decent tasting mushroom so i think they both works too. Oyster mushrooms already used in vegetarian variant in conjunction with straw mushroom anyway.

It doesn't. It needs longer to actually cook, but then again, Nigella has added raw mushrooms in a dish (recipe is called linguine with lemon, thyme, and mushrooms) in the past.

Yeah you can eat mushrooms raw so you’re really just heating them up here. If you want them cooked you could add them earlier I suppose. Mushrooms are odd in that they don’t really need to be cooked, but can be cooked for a very long time without being destroyed.
