Manish water (a light soup made from goat belly and vegetables), jerk chicken, roasted fish (roasted in the oven, wrapped in foil, stuffed with callaloo, okra, pepper and other vegetables), stewed cow foot and butter beans with rice. So many dishes to choose from. 😋😋 Edit: I forgot to add stewed peas and (white) rice! Make sure you get it with both fresh and salted beef in it. And plenty stew gravy. Goodness, me mout' a water. 😋😋🤣

The Oxtail, is the tail portion of the male cow. Just to give you a little history of how it became a Jamaican delicacy. During the time of slavery and colonialization, The white plantation master would butcher the animals on the farm and take the best portion of the meat for their families. On the other hand, the slaves had no choice, would take the remaining portions for themselves, like the feet, heads, organs etc.

African "British Colonization brought the trans-Atlantic slave trade, and with it came West African cuisine. This includes classics like jerk sauce, which traces its roots to West African jerk pork. It’s also the source of the famous ackee fruit, which is a part of Jamaica’s national dish, Ackee and Saltfish. Another important African contribution was callaloo, which is a steamed mixture of shredded greens like spinach or Amaranth that can be personalized with a huge variety of other flavors." www.jcskitchen.com/origins-of-jamaican-cuisine-the-melting-pot-of-flavor-and-culture#:~:text=African,national%20dish%2C%20Ackee%20and%20Saltfish.

@Sav Honey East Asian "At the height of the British empire in the 19th century, a large number of Hakka people from China were brought to Jamaica as laborers. Though the number of Chinese-descended Jamaicans on the island is now significantly lower due to ethnic violence in the 1970's that caused people to flee, we can still see their culinary influence in modern Jamaican favorites like Jerk Chow Mein, Cha Chi Kai, and the huge role that rice plays in Jamaican food."

I'm Jamaican (born in UK) and our food is for the heart, body, mind and spirit 😂😂😂😂😂 Oxtail is the tail of cattle, the meat is softer and its full of nutrients. I wish you tried ackee and saltfish, curry goat and escovitch fish. Now that's Jamaica 🇯🇲 When you said 'suck the sauce' 😂😂😂 that is the best when eating curry goat. Brown stew is cooked slightly different by us all. Some use BBQ, some wostershire sauce, others use tomato ketchup and some use no sauce at all.
