6 apples (3 Granny Smiths and 3 honey crisp apples), peeled and diced
4 tbsp unsalted butter
1/2 cup packed brown sugar
1 tsp ground cinnamon
Cornstarch slurry (2 tsp cornstarch mixed with 2 tsp water)
2 boxes or 20 individually wrapped (makes 1 cup of crumbs) Diamond Bakery Hawaiian macadamia nut shortbread cookies, crushed in food processor
Cream Cheese Filling
1 (8oz) block cream cheese
1/2 cup powdered sugar
2 tsp vanilla extract
2 cups heavy whipping cream
9 (6 oz) Mason jars
Topping:
Caramel sauce
1.) Peel and dice apples.
2.) In a large pan, melt butter over medium heat. Add apples, brown sugar and cinnamon. Sauté for 5-8 minutes, then add cornstarch slurry. Continue to stir until thickened. Set aside to cool completely.
3.) Crush shortbread cookies in a food processor. Set aside.
4.) In a large mixing bowl, beat cream cheese, powdered sugar and vanilla extract. Then slowly drizzle in heavy whipping cream while whisking at the same time.
5.) How to assemble mason jars: Start with a spoonful of crushed shortbread cookies. Then add a layer of cream cheese filling. Next, add a spoonful of cinnamon apples. Repeat steps one more time. Then top with caramel sauce. Best when served chilled.
