Hello, I am Casayun.
In this video, I will be sharing how to make really soft and moist rice muffins.
You don't need flour or rice flour for this recipe.
Made with raw rice, this recipe is very different from the texture of other muffins.
Very soft and chewy texture, it's like eating a chewy soft castella.
Easy to make with very simple ingredients!

Rice muffins
8 muffins
Raw white rice 180g (1 cup)
Hot water 400ml (1 cups + ½ cup + 3 Tbsp)
Eggs 3
Melted unsalted butter 110g (½ cup)
Sugar 130g (granulated / ½ cup + 2 Tbsp)
Baking powder 15g (1 Tbsp)
Salt 3g (1/2 tsp)
Vanilla extract 7g (1/2 Tbsp)
Please prepare ✓
* Soak a raw white rice in hot water for at least 12 hours.
* Line a 8-cup muffin tin with paper liners and set it aside.
* Preheat the oven to 170℃ (338℉) (more than 15 minutes).
1. Put the soaked white rice, eggs and melted unsalted butter (not hot) in a blender and blend them finely. (More than 3 minutes)
2. In a clean bowl, transfer the rice batter and add in the rest of the ingredients in order and mix well.
3. Divide the batter into the prepared muffin tin.
4. Bake in an oven preheated to 170℃ (338℉) for 15-18 minutes.
5. Remove the baked muffins from the tin and transfer them to the wire rack.
