Do not fear the cactus. Embrace it for its delicious flavor, reminiscent of green beans but with a light lemony note. Here, it's mixed with caramelized onion, toasted guajillo chile and fresh cheese for a remarkably tasty side dish.
Quick tip: Instead of scraping off the thorns yourself, you can probably buy some prepared cactus at a Mexican grocery store.

You have to wash it after taking off the thorns. The micro almost invisible "aguates" are still on it and tend to stick to it due to all the slime oozing from it. The last thing you want is to have your lips and tongue full of aguates, that is nasty painful.

a quick tip from a Mexican mamá.. 😊 if you boil the cactus with fresh garlic, salt onion, than rince after they are cooked they will lose that slimy texture. than do the rest that you did would be the best cactus I had.. great idea I love the rosting chiles idea.

I have a Mexican lady tell me to use the paper husks off of a Tomitillo and add to the water or the liquid that one uses to remove the slimy juices, started doing that, better flavor, as well it somehow changes it, doesn't foam up and boil over when making large pot full quantities, like oil on a pasta water. Send me your thoughts she said it helps keep some of the health benefits too, she came from a Nopal farm family, maybe she knows something ?

While I was watching, I got a whiff of my neighbor cooking something. It smelled like Ancho perhaps. It was an interesting experience to watch the nopales cooking and smelling a similar meal on the winds.

Don't be intimidated by cooking with cactus. These tacos are amazing, light and healthy. i added Queso Catija for the cheese and some fresh ground Cumin to the dish. Will definitely make these again. Thanks Chef Bayless.

Great Video... nopalitos is my most favorite Mexican food ever! My Grandfather had a large garden and grew most of the family foods in his yard. Nopalitos was incorporated in dishes like chili Colorado or with scrambled eggs or with frijoles and much more. I love how you described the flavor. Very good! You are on my bucket list Rick... if I ever get to Chicago my goal is to dine in one of your restaurants. All your foods and recipes are spot on authentic. Thumbs up

Would you make this with green beans instead of nopales or substitute with something like okra? I've had no luck finding nopales in my area...

I don't think the olive oil is for frying; some of its components degrade and make it bitter.

What kind of olive oil for cooking? The ones in the market seems to have low burning point and is good for salad only.

I would use avocado oil. It has a high cooking point.

Low burning point is not the same as low smoke point. You can deep fry in olive oil. The issue is that FFA are what 1) gives olive oil it's flavour 2) and smokes away. In other words, the reason you are paying more for olive oil literally smokes away if you fry in it. So it makes no sense from a MONETARY sense unless you really want the olive oil taste. From a scientific sense, it's totally safe to use at high heats.

Rick I've watched you for so long and love you but this is a terrible tutorial on nopales. First when you scrape them you end up digging the Thorns back into the nopal. Second you're removing at least 10 15% of it when you trim the edge. And third you left at least 25% of thorns still on. not good

tender young nopalitos best. I do not like cooks or chefs with facial hair gross! Some always makes it's way in the food.

Much more healthy to toss a couple hand fulls in a blender with some berries and a banana. You have cooked the living daylight out of the cactus, so all the nutrients are gone.
