Congratulations on your beautiful baby granddaughter. What a joy to see your daughter's life proceeding. Glad the baby has good taste. Of course she is a true curd nerd at this moment but I'm sure she'll hold on to that long past when she's making her own curds inside.

I wouldn't expect well formed eyes in a wheel that's been under pressure of vacuum packaging. I have a chamber vac and its worse!

You mentioned during the making video that the "warm" aging phase helped encourage the shemanii develop the eyes, but it was during that period that they flattened. Could it be that the eyes were already developed in the cool phase and avoiding the warm phase would have resulted in round eyes?

No eyes, but it seems like family enjoyed it regardless! Swiss cheese is an American classic and I was happy to see the recipe adjustments as well!

wow, amazing. dont feel to bad about the eyes, ive heard that even major producers of Swiss cheese are having problems with eyes disappearing. something to do with milk being too clean
