Nylon Khaman
Prep time: 10-15 minutes
Cooking time: 30-35 minutes
Serves: 4-5 people
Ingredients:
Khaman
WATER | पानी 1 CUP
CITRIC ACID | नींबू का फूल 1 TSP (showing)
SUGAR | शक्कर 3 TBSP
SALT | नमक ½ TBSP
GROUNDNUT OIL | मूंगफली का तेल 1.5 TBSP
GRAM FLOUR | बेसन 2 CUPS / 220 GRAMS
WATER | पानी AS REQUIRED
OIL | तेल AS REQUIRED
BAKING SODA | बेकिंग सोड़ा 1 TSP
WATER | पानी 1 TBSP
Tempering
GROUNDNUT OIL | मूंगफली का तेल 2 TBSP
MUSTARD SEEDS | राई 1 TBSP
GREEN CHILLI | हरी मिर्च 3 NOS. (SLIT)
CURRY LEAVES | कड़ी पत्ता 10 NOS.
ASAFOETIDA | हींग ¼ TSP
WATER | पानी 1 CUP
SUGAR | शक्कर 2 TBSP
SALT | नमक TO TASTE
FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED)
COCONUT | नारियल A HANDFUL (GRATED)
Method:
In a large bowl add water, citric acid, sugar, salt & groundnut oil, whisk we’ll for 2-3 minutes until the sugar & citric acid dissolves.
Further sieve in the gram flour & whisk well for 3-4 minutes until you get a smoothly flowing batter, cover & let the batter rest for 10 minutes.
While the batter is resting, set a steamer over high flame & keep it ready before you add the final ingredients of the batter, also grease the tray or plate you are going to be using to steam the khaman with oil, make sure it fits in the steamer.
Once the batter has rested, add the baking soda along with a tablespoon of water & whisk we’ll, the batter will puff up & rise, keep whisking for 2-3 minutes.
Quickly transfer the batter into the greased tray & tap it gently.
Place the tray into the steamer, cover & steam for 20-25 minutes or until a knife inserted comes out clean.
Remove the tray from the steamer once the khaman is ready & let it cool down to room temperature.
Meanwhile, set a pan over high flame to make the tempering, add in the oil & let it heat up.
Further add mustard seeds, green chilli & all the remaining ingredients of the tempering & boil the tempering for 2-3 minutes, then switch of the flame & let the tempering cool down slightly.
Once the khaman comes down to room temperature, demold it by flipping it onto a plate, run a knife through the sides once before flipping it & then cut it into squares.
Pour the tempering over the khaman & garnish it with fresh coriander & grated coconut while serving.
Green chutney
Ingredients:
FRESH CORIANDER | हरा धनिया 1 CUP
MINT | पुदीना ½ CUP
GREEN CHILLI | हरी मिर्च 2-3 NOS.
GINGER | अदरक ½ INCH
GATHIYA | गाठिया 2-3 TBSP (you can also use a piece of khaman)
CUMIN SEEDS | जीरा 1 TSP
SUGAR | शक्कर 1 TBSP
LEMON JUICE | नींबू का रस OF A LEMON
SALT | नमक TO TASTE
ICE CUBE | बर्फ 1 NO.
WATER | पानी AS REQUIRED
Method:
Add all the ingredients in a mixer grinder jar & grind it into a fine chutney, add very little water, this chutney needs to be thick in consistency.
Your green chutney is ready.

after trying and failing almost 20-30 times by getting confused by using fruit salt, turmeric, old gram flour, old soda but this time it all worked wonders by simply following your directions. thanks for clearing my backlog of failures and hopelessness of consuming homemade halwai like khaman also it was cost effective I used to buy 100 gm kannan at ship for rs 28 but today I incurred in total RS 45 including the gram flour, salt, oil, gas etc and got more than 400+ grams in return. making a whopping savings of 84 rupees .😮😮

Sanjyot, I made this today. Khaman has always been my favorite but due to recent sensitivity that I’ve developed to besan I avoid besan products. This one I had to try so I used 1 part besan and 1 part rawa, rest followed everything like you mentioned. Hubby said it was the best tasting Khaman EVER! Thank you 🙏🏼

I have tried like 100s of recipes and all failed. This is the perfect best recipe! I tried it and it turned out perfect! Just like the one we get from halwai! By looking at it we can make out that it is a perfect Dhokla, that spongy texture! Sanjyot you are an amazing Chef!

Being a Gujarati from my side its 'APPROVED' ✅, Thanks Sanjyot. First time a Non Gujarati chef has cleared the difference between "Nylon Khaman" and "Vati Dal Na Khaman". Everytime i hear anyone making this recepie and calling it "Khaman Dhokla" makes me little 🤨 And "Dhokla" is something which you make from fermented rice batter, like dosa batter, it has also 2-3 varieties, White Dhokla, Yellow Dhokla, Suji Dhokla etc. But now don't mix Khaman and Dhokla 😅 How if i say Bati Chokha😂 Litti Dal😂 Paneer Makhni😂 Dal Bhature😂

one tip which makes it even more fluffy that is mix the batter with hands after adding the soda, it makes the a lot difference dont know why but it does work.

Making Dhokla is most of the time challenging.. The first time when I saw this recipe I immediately tried it.. Because my children love Dhokla... It turned out really delicious.. Again today I have tried it in the month of Ramadhan It was super tasty and yummy.. Never found such an easy and simple recipe for Dhokla.. Thank you Sanjyot Sir.. आप बहुत अच्छे से बताते हो, बारीक से बारीक बाते जो होती है , जिनके कारण रेसिपी या तो बहुत अच्छी बनती है , या जिन्हें ध्यान ना रखो तो रेसिपी बिगड़ जाती है, उन छोटी छोटी बातों को आप बहुत अच्छे से क्लियर करते हो, vedio बडा जरूर बनता है ,लेकिन जो देखने वाले है वो तो देखते ही है. जिन्हें अच्छी कुकिंग करने का शौक हो.😊👍👌

Amazing recipe! Can’t wait to try it. 2 quick questions: can I use lemon juice instead of tartari? If yes then how much. And secondary I have a lot of chana dal lying around that I need to use up. So can you please show us how to make it using whole dal - can we soak it and grind it in a wet grinder and what should be the ratios of other ingredients 😀many many thanks in advance!

Had the same issue, web says to replace 1 TSP citric acid with 4-5 TSP lemon juice. Mine didn't turn out as spongy though , will try again without substitutions. Also I didn't have baking soda, so used baking powder .. this already has tartaric acid.

Because it's a Gujarati recipe, most of you know it as a khaman - dhokala. Why nylon, because of its sponginess.

In delhi we call it dhokla. But it actually is khaman. I think dhokla is that white one if I'm not wrong.

Yah it doesn't mean spongy... It's because it's a stringy structure like a nylon structure. And another reason is it's not made traditional like soaked chana Dal and then grinding it but these khaman are made by direct besan. It doesn't matter that name because it's just the way to distinguish between the khaman from soaked chana Dal and besan.

I just made this exactly as instructed and OMG this is the best dhokla ever !!!! It tastes exactly as the market one!! It was absolutely heavenly 😋 Just one drawback though it finishes quickly so u might consider making double batch 😁
