Plant carrot. Pick carrot. Wash carrot. Cook Carrot - serves 12! Haha! But seriously, you really grew some massive ones and they look great. Terrific idea to put the screening below the insulation!!!!! Yeah, taking advantage of the beauty that is Fall is why you've built the cabin. Awesome. Autumn is coming here to the high desert in an interesting way this time - we've had 2 or 3 big rains - not normal but we'll take it. The birds are so happy and the neighbor cats seem to really enjoy taking their breaks from their job as rodent repellents by stretching out in the sun between rains. We're out in the country but thanks to these cats, never have that sort of unwanted 'guests' indoors. Good neighbors!!!!

You and your family are living the dream, or at least my dream! Lots of hard work, but so worth it to be able to live that lifestyle. I’m transplanted from the U.P. of Michigan to North Carolina, and although it’s beautiful here, my outdoors heart still lies in the temperate deciduous forests of that latitude. Watching you and your father’s videos gives me some vicarious experiences, and I really appreciate you taking the time to share!

I tried to do that 24 years ago and found that NC is waaayy too expensive. I ended up in NE TN and never regretted it. You can move to certain counties in TN (Greene, Cocke, Johnson, Blount, Monroe and counties up on the Cumberland plateau), and still find some land that isn't sky high where you can have a small holding. I have three chickens, a large garden and am planting trees since the whole area was pasture when I moved here. I also lucked out and have a year-round creek on my property which enables me to irrigate the garden when necessary. Also, I'm about four (4) miles as the crow flies from the Appalachian Trail!

I was happy to see another video from you. I watch your dad and have for years. I am 74 and have 53 grandchildren and 13 great grandchildren. I love that you are such an independent person and have learned so much from your mom and dad. Candia is a rough place to live in at times but so beautiful other times !!! Am glad your doing the things with Mom & Dad they need the help now and it is easier to work hand in hand with someone who can teach you things along the way !!! Just a little tip when lightning your wood stove. Take a piece of paper and light it to push the cold air up and out of the pipe. This will help keep the smoke from backing out. Thanks for the beautiful video!!

We had to re-insulate our cabin yrs ago. The free-roaming sheep in the area had used the open space under the cabin as shelter, pushed up the (non-fastened?) lower floor boards btw the beams, torn down the insulation and had had their way with it (can you imagine a mix of poo, insulation and dirt?). It was an awfully disgusting job and me as the smallest (kid) was the only one who fitted into the tiniest crawl spaces. I never forget it. And if I ever make a cabin like this again I'd make 100% sure I insulate properly _before_ the floor is closed. Like these guys should have done.

Loved the intro with the tree tops and the beautiful autumn colours. You did a great job with the insulation especially getting it done in one day. Your steak meal looked delicious. Your dads cabin looks fantastic with the roof on now.

Hi Em. I've got this thing I like to call the full woodpile feeling. After I've completed this hard, dirty, back breaking job, I like to sit for 30 minutes or so and reflect on my accomplishment. Yeah, total flex I know, but give yourself credit, you could have spent it watching TV. There is just something so satisfying about being productive. Makes you proud of yourself. Much encouragement to you.

Emily, I just finished watching your dad's video installing the metal roof on the cabin. As I watched I thought, there is NOTHING this guy can't do! Well, you have just entered that arena! Emily I have a suggestion if you put that foil bubble paper under ur cabin and staple it it will keep all the critters out of ur insulation. They won’t chew on foil and it’s not to expensive.

Huge respect for doing this dirty insulation job. Always hated doing overhead jobs like that...especially in a tight space like you were in. That garden harvest will keep you busy with food prepping before the frost settles in. Our Canadian fall is so short so every day that can be spent in the outdoors is a fabulous time. I love watching your progress in life and never shying away from hard work :)

Emily, I've worked a lot with "itchalation", and you picked a good time of the year to install it. Not too hot, and not too cold. It looks like things are progressing very well there. Have you eaten kabocha squash before? The farm manager where my shop is recently harvested his squash for the season, so I was permitted to glean the remainders and I got a good bunch of them. I got some just for seed if you are interested. They are a winter squash, but the young ones can be used like summer squash.

Hey Emily! Thank You for another great video! Whenever you cook anything it makes me so hungry! We have been enjoying carrots, potatoes and squash from our garden. We have freezer full of garden items and I did can some pickles and tomato sauce too! Insulating the floor of your cabin will help make the interior feel so much warmer that's for sure. Emily, I know well the joys of crawling under buildings and hot attics and insulation. I’ll bet you’re so glad that’s finished! Years back I insulated a 40 x 120 foot building on a very hot July week and had to wear long sleeves, hats and gloves and did I ever itch for a few days. I actually burned the old work clothes even though they would have been okay for a few more work days. So Bravo on that fine job you did there! As usual, no matter if I just ate you and you Dad’s cookin always make me hungry. But I’m not complaining of course. The land there is amazingly beautiful and Thanks Kindly for those gorgeous views! I love the fall colors too. Here in NL we're not quite there yet. But some trees are starting to turn red now, and indeed, it's always over way too soon!

You are a brave soul Emily for insulating under floor, very few gals would do that job! I had a similar stove and to prevent the smoke filling the room I put a hair dryer as close as possible to flue then turned on high heat for say 15 seconds or so to reverse flow of the flue, then turn off in flue to prevent ashes being blown everywhere, then light fire.

I did the same with the floor on our addition. Rather than the black screen you used, I used the black OSB panels for the extra R value and rodents, bugs hate it. I love your content when it comes on so keep it coming and I'll keep watching.

Have to commend you for that insulating job....I remember doing that in a crawl space under a house I had years ago....without adequately preparing myself for the fiberglass fall out. Glad you had proper face covering. Well done! Very colorful food prep! You are quite the chef! Do you plan on living in your cabin for the winter?

Emily I think you are a very hard working young lady and to tackle putting insulation under the cabin by yourself is very brave. I would have been dead scared in case snakes were down there, you are very brave and it was a very tight space to work in. I have Closter phobia I would not have been able to do that. Love the autumn colours there and I am enjoying the autumn colours here in the UK where I live. Have a great day.

great job insulating your cabin floor and what a tight space to have to work under , But no doubt well worth it this winter , Those carrots and veggies looked awesome you don't see that quality in the stores , Id like to also thank you for the hike to view the spectacular Fall colors the trees were gorgeous. Absolutely!! I built a addition on a guys place and insulated before I put the sheeting down! He didn't understand until I showed him how tight it was going to be!

Purple asters are my favorite fall flowers... at least here in Texas they are all flowers. I used to have some, but have been unable to find any at our local green house. Am going to expand my search next season. The weather here was so harsh this past summer (extreme heat and drought), and loss of some of my favorites just happened. Y'all are definitely living my dream as well.

Good Sunday morning Emily. Excellent video with superlative production values. - so inspirational, motivating and heartfelt. But of course, that's to be expected from a strong self sufficient offgrid woman such as yourself. My favorite method of maintaining a sustainable pantry and garden and stockpiling items long term for the whole family s what I consider to be the most practical, utilizing every type of technology both old and new. . Except for the fruits and vegetables that get canned, I keep perishable items like meat, poultry, fish, fruit, vegetables and dairy products in the refrigerator on a short term basis until I'm ready to use them for a big family meal - and for even longer term sustainable storage, a large separate freezer, which can store a half side of beef with plenty of room left over for homemade ice cream etc. . I'm considering upgrading to a walk-in freezer at some point.in the near future, if my plans to open a bed and breakfast come to fruition. Sometimes, however a nice round of cheese can do well for quite awhile on a pantry shelf at room temperature - and doesn't mind even if it has to stand there alone. Store bought canned goods get shelves.in the large pantry closet - several for canned meat like corned beef hash, spam and sandwich spread and another for canned vegetables Bread, rolls, grains, homemade pasta, cereals and the like are stored in special humidity controlled bins I order from Amazon Prime - which usually get delivered to my doorstep about an hour after I order them. . Stuff from the family garden and orchard, like onions, bell peppers, tomatoes, cauliflower, cucumber, pumpkins, carrots, corn celery,, potatoes and yams, cherries, blueberries and strawberries get canned in Mason Jars and stored in the cool, root cellar of this wonderful rambling former farmhouse (circa 1867) I share with my extended blended family and several rambunctious dogs raised on table scraps from the some of the finest food from a plethora of sources both commercial and home based. . There's even a special separate "summer kitchen" which I converted to store butter and ice cream churns, pots, pans, utensils, extra storage containers, foil, bags, cutlery, and other meal related accoutrement. Out back in the woods, just beyond the big pile of wood I maintain all year, (for use in an antique woodstove I keep on hand, in case the power goes out) there's even an old rusting vintage still where my great grandfather made some of the finest corn whiskey for miles. Next to it is the rusting hulk of the Ford Model A he used to transport that powerful hootch by the light of the moon on soft summer nights to his eager customers in a tri-county area. Further into this verdant forest of mostly sycamore, oak, pine and scrub, runs a cool stream into which I occasionally cast a rod or net to catch some Brook Trout, Bluntnose Shiners, or whatever takes the bait (just earthworms for the most part). And yes, hunting season means wild turkey, deer, and even an occasional wild boar. Next week, I'm planning on filing for a permit to 3-D print a smokehouse in order to be able to create gourmet artisan handcrafted, beef, bacon, turkey, and beef stick jerky, which interested local merchants can private label for other people to share with their families and their family dogs. Unfortunately, I had to break the bad news to my free range hens today that due to expected egg shortages regretfully numbered are their days of laying a couple of eggs and then basically taking the rest of the day off with ranging privileges' within the parameters of a few very nice rural acres - parts of which are rich with fat grubworms. There's even a short dirt road between the main barn and the farmhouse which they're free to cross to get to the other side as often as they'd like. My rooster Ben overheard me and he ain't too happy either, knowing full well that due to oncoming egg shortages, he'll be "workin' overtime to make sure there's plenty of eggs for the homestead.😊
