OLD SCHOOL SOUL FOOD

This is the way i grew up eating salmon
i didn't know about whole salmon until i grew to adulthood
i actually thought salmon came in a can and not large fish
Ingredients
15 oz canned salmon in brine
2 eggs
1/2 cup of breadcrumbs
2 tbsp. of mayonnaise
2 tbsp. of chopped onions
Salt and pepper to taste
vegetable oil for frying
Instructions
Drain salmon, de bone and transfer to a mixing bowl. Flake meat with fork. Flaking salmon meat with fork
Add the rest of the ingredients, excluding vegetable oil, and mix well. preparing mixture for mackerel patties
Using 1/4 cup as a measure, shape into patties.
Fry in small amount of vegetable oil, on medium heat until golden brown (about 3

I've never taken the bones out of canned salmon, they're soft and full of nutrients, been eating it for 60+ years.

My Mom made salmon patties and homemade biscuits and we had brer rAbbit syrup i had forgotten about brer rabbitt don,t know if they still make them or not will look for some week always loved brer rabitt syrup

Oh my goodness, bring back happy memories. Where I Iive we don't have Brer Rabbit. Once a friend brought me a bottle from New Orleans ❤❤❤. This is a great video ❤

Those bones are completely edible and meant to be eaten. They are an excellent source of calcium especially for women. I grew up in southern Louisiana so I add some finely chopped onion, celery, green pepper, and parsley. I serve them with Mashed potatoes, biscuits and pan gravy, a green salad.The next day any leftovers are put inside a biscuit with warmed up gravy. That is a good lunch.

That is for sure the bones are edible, it makes it crunchier, and i need the calcium for sure.. you would never know they were there. I just now hearing how people take the bones out.. kind of crazy really. Thank you though for your recipe

We always use cornmeal as our thickening agent, it adds an unbelievable taste to the patties. We use them on sandwiches with a slice of raw onion and lots of mustard!

I just found your cooking videos. I absolutely love watching you cook. You cook just like my southern grandmother and mother. They were both fabulous cooks and I miss them so very much. Yessssss! Great to keep the bone product. Loaded with calcium. Bones are soft enough to mash fine into the patty.

The fish bones are good for you. If you don’t want to crunch down on them all you have to do is crush them up and mix everything together. You won’t even know that they are in there.

@@baileybutterfly320 The bones are soft because they are cooked along with the salmon during the canning process. I personally remove them, but my mother always left them in. She said it was a good source of calcium.

Oh, yea!! This was one of my old school father's favorite recipes! I too, until I became an adult, thought it only came in a can, because that's what my father used. He went to heaven 12 years ago. I will make this recipe in honor of him on the day of his next birthday. Thanks!!

Thank you so much for this recipe. It warmed my heart to see it. My mother used to make this on Saturday mornings with biscuits and buttered rice. We'd have breakfast and sit and watch her favorite western shows. It's one of the few recipes I did not get from her before she passed. I'm going to make this on Mother's Day.

I’m from Texas, my grandma used to mix flour and cornmeal with the onions and bell peppers! We would eat it with biscuits and karo syrup, and smothered potatoes! Ewww Chile talk about good eating, you would for sure need a nap after that. Miss those good ole days, my grandma is with God now! I'm from the SIP(Mississippi) also. We too, ate our salmon croquettes with syrup, n biscuits. We had a big family, therefore my mother added cooked rice to the salmon mixture, to "stretch" the salmon. Years ago, I found an interesting recipe in a magazine for salmon croquettes. I haven't tried it yet, but the recipe added English peas, n cooked mashed potatoes to the salmon. Here's a "rule of thumb" I live by too.To be on the safe side,...when taste sampling my dishs with raw eggs in them, I add all ingredients, except the eggs. I then sample my dish, n if I'm satisfied with the taste, I then add the eggs last. This is just a thought, bc, I have no personal ill, feelings of anyone sampling their dishes that includes raw eggs. As, the saying goes, "to each their own." To all...be blessed and stay safe.

... it's 3:43am Monday, in the morning, n I'm here on KZfaq looking at these salmon croquettes. I should be asleep, bc, I plan to work in my vegetable garden about 6:30 this morning. I HADN'T planned on cooking Monday, bc, late Sunday evening, I cooked: baked pork chops, okra corn n tomatoes, n corn bread, and I planned to eat leftovers Monday, but after seeing these croquettes, I want some RAT NOW, bc, looking at them, has me feeling hungry!!!🤭 I ain't got "no Mike 🎤" to drop, so... I'm getting my hungry tail offline, to get a little shut eye, before my day starts in about 2.5 hours. Forgive me for going on, n on n on.😬 To all...be blessed and stay safe.

They are lighter inside if you boil a potato whole, then mash it up to add to the patty and dredge them in cornmeal before frying. They are light and fluffy inside and crisp outside. Salmon patties Memphis style.

Can't wait to try it this way. I love them, my Mom use to add a little flour and baking powder to make them raise. I always add chopped up red bell peppers to mines. I usually make a sandwich with mustard and mayonnaise, delicious!

Wish I had paid more attention when I was younger and helping my mother in the kitchen instead of just watching and eating her delicious meals she prepared for her family of seven. I can make her chicken and dressing but there are many things I can’t because she never relied on measuring spoons and cups. The one recipe I wish I had written down was a fruit pie. She would make up a big batch put filling in a vanilla wafer or graham cracker crust and freeze them. This was back before cool whip was even on the market. But I remember her beating Dream whip or evaporated milk in her dishpan adding crushed pineapple and that is all I can remember. She wanted that pie before she died and we could not find her recipe to make one for her. I feel sorry for the younger generation because they don’t want to hear anything about what their parents had to do when they were young much less learn how to cook. Sorry for being long winded just feeling a little melancholy. Love Chef Jeffery’s channel.

I add regular yellow mustard in my salmon cakes, which gives it a good taste. I also use Panko crumbs instead of flour, and minimize the mayonnaise.

My mom would pick out the bones and those were my treat as a child. Loved those. She served the patties with creamed peas. One of my favorite meals she cooked.

My grandma made salmon patties every weekend. We ate them with grits homemade biscuits and mustard catsup molasses syrup grape jelly hot sauce and cha cha. Those were good times great memories and good eating. 😇

Thanks for a terrific recipe. A family member always made seafood sauce with these & it adds a lot of flavor. Mayo+ketchup+diced bread & butter pickles or sweet relish.

I don't know why I haven't cooked this in so long. Loved it when my Mom made this meal. We had rice and biscuits with it. Either syrup, jelly or molasses on the biscuits. I get a little emotional watching your video. I know, I'm just wimpy! But I can't help but think about my Mom (and Grandma down in AL) making this meal for us when they were alive. I remember mom making fried fish patties. Any fish she had on the shelf. She added celery and peppers in the mix. We always ate our fish patties with ketchup. Thanks for sharing your recipe and video. 🙂👍

When I was growing up in NM, we ate salmon patties every year during Lent/Good Friday. With 12 kids to feed, we ate every fish bone & bread crumb! ;-)

Oh my, this does bring back memories! I can see how using the mayo can make the patties moist ... I will be trying this. Especially, remember the Brer Rabbit syrup with some hot biscuits. Hadn't thought about or eaten this syrup for at least 60 years. Thanks Chef.

I love Brer Rabbit but I prefer Steens in the yellow can. We never ate syrup with our croquettes. They were an edition to seafood nights. Fish and shrimp etcetera. Catsup and Tartar Sauce.

Speaking of, mayo n, moist, here's another "food for thought"; back around 1976-1977, a co-worker told me to add a spoonful of Miracle Whip to my corn bread mixture, to make it fluffy. I've been adding Miracle Whip to my batter every since! It makes the bread fluffy and moist. Girrrrl, dat Bread be good! I would cut me a "hunk" of dat Bread, then split it in the middle, throw some margarine in that split, let it melt, melt some margarine on top of the bread too, sprinkling some salt on top,(I use Garlic salt now) n I "GO TO TOWN" on dat Bread!!!Bread dat good is called...CONE BREAD! As Florida Evans said on Good Times, "DAMN! DAMN! DAMN!You HURD me! Forgive me, bc, I prefer "not" to use the inspirational word (blessed, n cussing word damn, together... but in this case: DAMN! I couldn't help myself🤭. Dat "CONE BREAD" will make YOU want to slap somebody! 😊Be blessed, enjoy the rest of your day, and stay safe.

Just putting on an Old Fashion pot of Beef Stew, knowing this will pair well with the corn bread. Funny, you should mention Florida Evans, because since I've down graded my cable service, I been binging on that series...LOL!! All blessing to you and yours.

@@MsUnik44 you are welcomed for the tip. I'm watching lots of Good Times, Sanford and Son, too much of Gunsmoke, and The Virginian☺️. I hope the Miracle Whip make a difference in your bread. That beef stew sounds DELICIOUS 😋. That type of food can fills you up, makes you lazy, and sleepy 😴. I love corn bread, but it makes me itchy. My favorite food is spaghetti,n corn bread. Any form of corn products, (and I use to eat pop corn nearly every day!!!) or Tomatoe products, breaks me out nowdays. My mother use to say, "keep living long enough... everything going to hurt you, wear out, or, break down☺️. That statement holds truth...my favorite foods, break me out in hives, so I'm now popping Benadryl, to sooth the itch🤭. I pray this doesn't get to the point where I start swelling, bc, then, it's more serious, n, I'll have to stop eating those items. When my mother really enjoyed her meal, she would say, "I have SUFFICIENTLY dined." So Ms. Evelyn... I hope u sufficiently enjoy your beef stew meal. This definitely reminds me of my childhood. Although, I grew up in Los Angeles, my Wonderful Mother was Born and raised in Mississippi before moving to Chicago. My Mother cooked her Salmon Croquettes the same way. I loved eating them with syrup and sometimes with grits and eggs. Wow, it's amazing how similar your style of food preparation is to moms. Thank you so much for reminding me how very Blessed me and my siblings were. Please continue to share our heritage 💪💪👏👏👏!!!I Love the realism of your channel. I feel like I'm with Family!!!

Yes! I love Salmon patties. My mom adds diced potatoes to her recipe. We Sautee our veggies before we mix...So good.

This does bring back memories. I grew up in the 1930s in a small town, and I never knew that salmon came in any shape but what came out of a can. We called it "sammen" too. I have always loved salmon patties, nice and crunchy. Yours look delicious, but I never heard of putting syrup on it. Worth a try!! Our family liked to pour peas in cream sauce over our salmon patties. Just a can of peas with butter and milk, and some flour to thicken it. No cream, but we called it cream peas. I feel sorry for little kids that have never had salmon patties. I used to make them for my kids and shape them like little fish.

My mother in law taught me to make “tuna fish” patties instead of salmon or mackerel. Made similar to this. They were coated with cornmeal before frying. So good! These salmon croquettes look delish!! #helpsomebodyoldschoolsoulfood

My mom had the tuna fish patties. I can't remember if we had the salmon or not. I do now, I love both. I also do it with mackerel,, it's way cheaper than the canned salmon.

I like them thinner, with side dish of mashed potatoes and gravy,( made with pan drippings) cucumber Onion sourcream salad and hot biscuits with a big ol glass of sweet tea. WHOA, MERCY 😋

This takes me back to when my siblings and I visited our grandma and other family members in Star City Arkansas for the summer. She would make salmon, fried corn, rice, homemade biscuits and Karo Syrup. Absolutely love it delicious 😋 😋

Lord knows I ate so many salmon patties as a child! We used use a brand called Eatwell. Both momma and grandma made salmon and mackerel patties. We used to eat them with grits or rice.

I grew up on these but we topped them with creamed peas. Today we like them with a home-made dill sauce. Also the left-overs are great cold!

I always loved salmon patties growing up. I’ve made them a couple of times in my adult years, but my kids were not fans. Now that they are older (most are grown), and their taste buds are more developed, I think I’ll try it again and see how they feel about them. I like them with ketchup mixed with Tabasco and French fries. Yum!!!

I think that the Molasses, Syrups, and Jellies were a consequence of serving it with those light, delicious, buttery biscuits. Such wonderful country memories. Mustn’t forget the slice of slab bacon or a link of country sausage on the side. 🥰

That's my mom's recipe and the same one I use now! My favorite summer meal as a kid was salmon patties, creamed potatoes and corn on the cob with some garden tomatoes sliced along side. Now that I think of it, that sounds like a good idea for this weekend!

In WV, we serve the salmon patties with honey mixed with mustard, creamed peas & potatoes, and steamed carrots. I'll have to try them with Brer Rabbit if I can find it. I'm really enjoying your channel.
