Local oyster omelette is mainly divided into Teochew & Hokkien style. It is said the original version of Teochew oyster omelette, orh suan, is a very starchy dish. Kym & Chef Devid visit local traditional eateries to collate all information so as to recreate the old taste of Teochew oyster omelette.

I cannot express how happy I am to find this series on KZfaq as an ex-Malaysian living in Australia, remembering how orh luak tasted as a Teochew kid in Kuching. Also, the basic recipe so easy and I can make it with Oz oysters, which are fantastic !

The oysters used in the olden days were a lot smaller. The ones they bought to recreate the dish are definitely not right and won't be able to recreate the taste. The smaller oysters are a lot more fragrant and full of the smell and taste of the sea whereas the big imported ones that you get nowadays lack that kind of depth & flavour for good o' oyster omelette. Cutting the big oysters into smaller pieces is useless as it is different type of oysters! But it was a good effort!

probably different species ,lol damn funny people say oyster , big and small , imported one probably dead for some time hence the fresh flavour is gone

Don’t know about the taste but I 100% wouldn’t trust any oysters coming from pollution central = China.
