Which grain size do you use before the natural stone?
This video focuses on sharpening with 1500 and 3000 grit stones. Initially, I had planned to use a 6000 grit stone, but the Hakuto 2S 3000 Grit (Soft) exceeded my expectations.
In a previous video, someone commented that a Kasumi finish is impossible with a diamond stone, but during this sharpening process, it appeared at some grit.
To show you the reality of sharpening, we also include the unexpected incidents and how Ivan handled them. Please take a look at some of the work done by the sharpeners.
包丁研ぎ歴25年、現在は日本三代包丁産地である大阪府堺市で包丁会社に勤めているカナダ人です。
前回に引き続き、ダイヤモンド砥石で仕上げていきます。次の天然砥石の研ぎに移る前に、どの砥石を使って、どのような研ぎを行うのか。途中黒打包丁ならではのハプニングもありましたが、なんとか撮り終えました。
