San Francisco doesn't get a lot of rain, and most of it is received during a few winter months. This season is another drought, so even less than usual this year.

Not quite sure what the purpose of polishing the ceiling is for, can someone shed some light on that?

There will be no false ceiling and that will be the final finish.

They only grind the ceiling on floors don't have plumbing beneath the floor and therefore have an exposed ceiling.

In those places there will be no drop ceiling, in those places they achieve a high ceiling by going all the way up to the concrete.

Too bad you don't have a drone to get some nice aerial shots like @ 27:14. Another thought for next time. Maybe the contractor will let you place a camera on the bottom of the cab in the tower crane.

The building's website -- at 1001vanness.com/ -- offers some information. It says the tower crane is scheduled to be removed the weekend of Jan 30, and there is a timeline that shows exterior facade work to continue until May 2021, and interior finish work until Dec 2021.

Why do they polish the ceilings? Aren’t they covered with suspended tile ceilings later?

They polish those sections because they will not be covered with suspended ceiling. They are going for the full available ceiling height in those sections. You have to watch several episodes to see the full process. First they grind off the flanges of concrete that were formed by gaps between the sheets and other voids in the forms, which you can see at 4:57. Then, like at 22:16, they plaster over any voids in the ceiling, especially in the areas where there were joints in the form sheets. Finally, which I didn't see in this episode, they put a skim coat over the whole area which they finish with trowels, presumably to get a smooth finish
