Wel I mean he did handle the pecan with his hands and just left it there which could have transferred bacteria to it He wouldn’t have made contact with it. The other issue is he used the can opener for all the products without sterilizing it which could also result in cross contamination

@@vinnysgphone Also, the 'petri dishes' were left open. You should only uncover the - sterile - petri dish as briefly as possible to smear your sample on the agar; preferably in a sterile environment, or with a flame near by to kill any bacterial spores floating about.

@FlwrBoi Then he grabbed a pecan and dropped the whole thing in there negating that whole point. He also dumped all of the items in a bowl creating cross contamination. He inoculated the cheese one by shaking the can over top, ensuring any particulate matter on the outside of the can could easily contaminate it. Those petris told us nothing about the contents of the can, all they demonstrated was his inoculation techniques for each.

I believe that since every Petri dish had the “black” mold spots and they were in and down the sides; those spots were contamination from making up the dishes and not from the cans. You really need to add a “control” dish also to your samples AND use sterile tweezers to rub samples like the pecans so nothing falls from your hands.

You are correct. This is also the same dude who said he was going to use his "sterile cotton swabs" and they were cotton buds from the grocery store lol!! No, his sterile field sucked, he used his bare hands, he exposed his agar (assuming it was even enriched) to open air for who knows how long, and he didnt use an incubator. His little "microbiologist" attempts were an epic fail but he did kind of try.

I loved the addition of petri dishes here! Very cool, hope to see more! This may be unwelcome, but I'm a biochemical engineer and deal with sterile environments a lot. I believe the definitively different growths shown here mean you really did test the food, but if you really want to be certain things are sterile, here's a few tips: 1) Wear some gloves. Like you said, hands are GRODY. Even touching the food barehanded might screw it up. 2) For cheap petri dishes, I'd use short jelly jars or glass baby food jars and pressure cook them prior to use. You can make it even better by pressure cooking with the foil already on top. Keeping your plates closed as much as possible can help ensure the mold isn't from a house (houses are gross). 3) The mushrooms seemed pretty fine after the fact, but I was worried about dumping them all into one tray with the juice. Doing them one at a time avoids contamination. Anyway, given my stupid rant, you can probably tell I got over-invested. Hope I didn't come off a total ass.

Those can openers were made to last. This one sounds like it did when new...my mom had one which I gave away ten years ago and it still worked. It actually has a strong motor but yeah, it sounds like it's ready to quit. It has a bottle opener in front and a knife sharpener in back.

The most interesting bacterium you will find in those cans is C. botulinum (extremely toxic) and it cannot even grow on Petri dishes like that because it is an anaerobe.

Do you ever consider making some of the recipes featured on the vintage packaging (using new ingredients, of course). The mushroom sauce recipe looks very intriguing. Also, the apples were probably too acidic for any bacteria/mold to have survived in that environment.

Food microbiology is my job. I love the fact you are so interested in it. Here are a few helpful notes for future episodes: order pre-made micro media such as TSA (tryptic soy agar) which is a general media, invest in a bacteriological can opener (use a flame to sterilize at a red glow on the metal before and in between each can), use sterile swabs (see Fisher Scientific), use gloves, disinfect can before opening with the bacteriological can opener with 10% volume/volume bleach or betadine by leaving solution on one can end for 20 minutes (dry with clean paper towels and flame the surface moving the flame in a circle slowly for about 10 seconds), don't pour out or touch food before swabbing to petri-plate, don't talk while swabbing sample to the agar, and only expose the agar surface for as long to swab it. Be very careful opening swollen cans even old ones. Get informed about Clostridium botulinum and the toxins it produces. Best wishes on your future endeavors.

When you do this, you should have a control group as well. Use modern equivalents, and one just exposed to your air, considering it wasn't exactly a clean environment.

It's often due to dents, especially along the seals. Any contortion of the metal can be enough to create an opening that can still hold water, but not truly be sealed. Sometimes, cans can be completely breached, but plugged with dried product--This can hold the water in, but doesn't keep outside bacteria out, and often provides an enticing pathway for bacteria to follow to the inside. Many of these openings are not large enough to be visible, but dents can indicate the possibility that they are there.

My family is from the Pittsfield area of the state originally after coming from Italy 🇮🇹 in the 1930’s, my grandpa owned most of the land that Westinghouse owned at one time !! He owned bocce courts and made wine way back in the day ! I would sub to your channels if I knew them all, I am subbed to 2 but don’t know if you have any others ! Best of luck and enjoy watching them ! See that you made it onto TV, hopefully they do something before someone gets hurt and hopefully nothing worse ! I also would like to add that some bacteria is actually good for us !!
